summer's here....any salad recipes?

    My daughter used to say she disliked salad - she would eat crisp lettuce; cucumber; boiled egg; celery; cress; new potatoes; red onion rings (had to be rings, wouldn't eat the middles) and coleslaw.............but she wouldn't eat 'salad' :D

    Now her favourite is either chicken caesar or hot chicken, bacon and avocado on watercress and rocket ..............with loads of coleslaw!

    My mum likes either a chopped banana or grapes thrown in hers.

    Has to be caeser salad as my fav....would chose it every time its on the menu!

    You can buy it in bags with everything in to make it but works out cheaper to buy a romaine lettuce an a bottle of dressing, block of parmesan etc..

    A general everyday salad for me....iceberg, red pepper, cucumber, sliced tomato, black olives (favourite type of ones in a jar) and some sliced chicken, maybe a bit of grated cheese. Dressing would be a mix of mayo and salad cream or a bit of sour cream an chive.

    Making me hungry now!!

    putting dressing on a salad makes such a difference - and no need to think it's unhealthy to have dressing - I think I read somewhere that it makes it easier to digest and get the full nutrients from the veggies.

    my favourite dressing is very simple. I make it up in a jam jar and it keeps for ages in the fridge.

    put equal amounts of olive oil and wine vinegar in a jar (white balsalmic vinegar is my fave)

    add half a teaspoon of sugar, half a teaspoon of mustard (or pesto if you have some open)

    give it a really good shake...and that's it. you can experiment by adding different things until you come up with your own trademark dressing.

    Well - I didn't get a chance to try any of the salad I brought today.

    But made a chinese chicken broth with fresh carrots and baby corn, I always throw in some monge tout (awful spelling) for hubby - and he got me to try some.

    I would defo have it again - think I could get used to it quite easily.

    So I'm two for two on days of trying new things - both of them GREEN which have always been total no no's for me in the past!

    Really looking forward to making a chicken salad tomorrow, thanks for all of your suggestions.

    ooh forgot to say I also dislike tomatoes but I love them cooked in pasta now, roasted cherry tomatoes with wilted spinach and tagliatelle is wonderful and I think cooked tomatoes are still very good for you?

    My new favourite salad leaves are pea shoots, they are very tasty amd quite sweet. I think you can only get them in sainsbury or waitrose at the moment.

    I get mine from the windowsill, as I sow a pot full of peas once a month.

    yes, heating tomatoes releases the chemical compound lycopene. It's what gives tomatoes and certain other fruits and vegetables their colour. It's thought that it is useful in reducing tumours and thought to be especially beneficial to men regarding prostate cancer.

    as a kid, i believed veg was horrible and bad because people said so.

    now im 26, im finding i love veg, the plainer and rawer (not a word i think) the better!
    i like simple lettuce, cucumber slices, carrot strips all dunked in salad cream!

    Hi I love my salads but only know how to make 3 types.

    The first ,the normal iceburg,cucumber type.
    Then a green salad with lettuce ,peas etc .
    Lastly a carrot and orange salad,which is grated carrot and bits of orange with orange juice over it.

    Can any body please help me extend my salad menu s as im bored of these 3 already and summer isn t even here yet.:rolleyes:
