    I did one tonight where I heated some vinegar (3 tbsp) and sugar (2 tbsp) and poured it over sliced red cabbage. I tossed it and then tossed it again regularly for 20 minutes before serving. Quite nice. Another I've done was thinly sliced celery and fennel in a vinaigrette with plenty of lemon juice.

    When OH wanted to lose weight i tried to make him a filling lower fat tuna salad this is how i make it:
    I boil some pasta usually spirals then cool them down, meanwhile i open a nice can of tuna chunks in spring water i mix it in a bowl with low fat yoghurt(or greek) and a bit of mayo and some lemon juice, i then shred iceberg lettuce, chop plum baby tomatoes and cook some organic sweetcorn(or icelands £1 bag of sweetcorn) then i simply mix it all up together season and serve to him with crusty frenchstick.
    This makes a large and very filling bowl/batch(a bit like the expensive salad bowls in tesco etc) it isn't too unhealthy and does the job nicely as it is full of flavour.
    Sometimes i add spring onions,cucumber or peppers to add crunch. It is very versatile but nice and tasty and easty to make and keeps for a few days when wrapped properly and put in fridge(got 4 days out of it before i didn't trust the lettuce any more lol).
    I am trying myself to find new salad ideas before summer comes in as there is only 2 of us and when i buy a lettuce and tomatoes,cucumber, we don't eat it all quick enough and i don't really want salad for loads of nights in a row :) well the same old salad lol
  • Brown rice is a good base for salads and very filling. I add tuna, feta cheese (a little goes a long way) tomato, cucumber, sweet peppers, spring onions and olives for a greek style salad. I usually mix a little oil and vinegar for a dressing but might try Gunna's idea above and add yoghurt and lemon juice next time!

    I like Iranian Salads.

    Diced Cucumber, Tomato and Raw Onion. Simple, but lovley with Rice.
    I know my spelling is shocking :eek: It is alot better than it used to be though :rotfl:

    I don t suppose anyone has any chilli salad recipies .I ve grown loads and would like to use some fresh before i dry the rest out.

    Make up some egg noodles as per the instructions on the packet. Leave to cool.

    Put the on a plate and add some green leaves including some coriander, thinly sliced raw red onion, sliced rare roast beef (or strips of steak). Dress with a mix of lemon juice and olive oil (1 part lemon:2 olive oil) and sprinkle sliced chilli on top. You can add a little nom pla (Thai fish sauce, a little like Worcestershire sauce) to the dressing if you like.

    Salade nicoise (green leaves, tuna, anchovies, olives, green beans, hard boiled egg, tomato, cucumber dressed with vinagrette) is a winner.

    Blue cheese, pear, celery, green leaves and walnut is excellent.

    This sounds good ,i ll have to try it but without the noodles .Far to heavy for my lunch.

    in our house the favourites are
    grated carrot and courgette with peanuts and raisins,
    couscous with cold roasted veg,
    coleslaw,
    and i love lemon juice on most salads

    oh and thinly sliced cucumber soaked in vinegar
    when your life is a mess light one more cigarette its so logical!!

    Smoked mackerel! All the usual salad stuff, lettuce, rocket, toms, peppers, onions and then some chopped up apple, it seems to go really well with the fish - I don't know why! Add a little mayo, or half and half mayo and yoghurt, Yum!

    Thinly sliced lettuce, cabbage, cucumber, with grated carrots, and anything else you'd want to add in the salad, then dressing:

    2-3 crushed cloves of garlic, salt and pepper, olive oil and lemon juice - mix well, and drizzle away...yummeroonie :)
