    Tonight is home made veggie lasagna and the salad is cos lettuce, finely sliced celery, de-seeded cucumber (skin on), red pepper, cherry tomatoes, sweetcorn, sliced red onion and black olives

    Last night was a similar salad with jackets spuds and tuna mayo

    I really like a nicoise style salad that has romaine lettuce, new potatoes, green beans, boiled egg, black olives, cherry toms and a dressing made from fresh lemon juice, olive oil, grain mustard and salt and pepper

    i am wondering of wether to try some grains like couscous etc with my salads, OH does not like rice so cant go down that route

    today I had ham and hard boiled eggs with lettuce, rocket, toms, cucumber, olives and pepper and lovely lovely pizza express salad dressing (I know the dressing isn't very mse but i LIKE it!).

    the other day we had one with lasagne and one with blue cheese (whoopsied - best type of blue cheese cos then it's ripe enough)
    my favourite is Goats cheese and walnuts and pears (Oh my!! sorry family joke)

    The nicoise works well with tinned tuna or a griddled tuna steak if you are splashing out.

    Couscous is a great filler but it will only taste of what you put in it if you see what I mean. I make a spicy couscous by covering it with boiling water and adding a dollop of curry paste then covering with cling film or a plate until the water is absorbed. When it has cooled, add really finely diced red onion and chopped coriander. Delicious! This is also equally good with roasted veggies added as well

    Tonight I have made up a salad with mixed leaves, cherry toms, cucumber, red onion, feta cheese, croutons and balsamic dressing mmmmm. Served with half jacket potato, barbecue marinated chicken thigh and a bit of coleslaw. OH had 2 thighs and cheese on his potato too, I really enjoyed it :)
  • I love a hard boiled egg salad with salad cream, but today i had a lovely cottage cheese salad with some pickle, might sound a bit of a wierd combo but it is lovely :)

    Todays lunch was Nigellas Egg and Bacon salad- it tasted YUMMY!
