summer's here....any salad recipes?

    Salad leaves with basil thinnings, chive thinnings (balsamic/olive oil dressing) with bruscetta made with tomatoes and feta cheese.
    TBH I bought the Moosewood restaurant daily special cookbook because it's mainly soups and salads (although as far as I know this aint one of them) just because I was getting bored of salad. I'd recommend the book.
    Saving up £25000/£3500 by Jan 1st 2012 by selling my clutter. Remember I'm doing it for Dad.

    well todays is same as yesterday, remaining lasagne, jack pots, and a big pile of salad leaves, cue, p oinion, beet, toms, rad, maybe a little cheese

    Yes! Put cous cous in your salad! The last salad I had was rocket, spinach, quinoa, green lentils, cherry toms and pesto. I mixed the pesto in with the lentils and quinoa while they were still hot and keep a big tupperwear full in the fridge for easy salad making.

    I love these meals - all main courses:

    Chicken ceasar salad
    Pizza Express Pollo salad style (chicken & goats cheese, just a little of both)
    Salad with finely cut boiled egg & ham with mayo on top
    Salad with prawn coctail on top, garlic bread
    Prawns mayo in avocado half with salad&garlic bread on side

    Can you tell I am big fan of prawns and garlic bread???:-))
  • salmon wellington, with mixed lettuce, cucumbers, tomatos and some pasta salad. At work and treated myself to lunch as they had a special wedding menu on - but its just too hot for a roast! Oh also had a naughty Eaton mess ;)

    Ate it sat outside in the sunshine, sigh only another 5 hours left at work :D

    Last night I made a veg stirfry to go with home made crab cakes mainly with salad ingredients - little gem lettuce and halved cherry toms added last minute to stirfried green beans, onions, pepper, carrot in a sweet chilli sauce - yum!

    All time favourite lunch box salad - Ainsley Harriet morrocan cous cous (usually on offer in iceland with 50% extra free!) left to cool with any veg to hand oven roasted whilst doing other stuff in oven - usually some of following onions/carrot/pepper/parsnip/courgette! I then add any left over meat from sunday roast or bbq and lettuce/toms/cucumber/radish.

    Today? Mixed leaves (I grown them in halved milk containers in the greenhouse), cucumber, cherry tomatoes, red onion, chopped hard boiled egg, tinned tuna and a few olives, with vinegrette dressing. Plus some HM bread. From spring onwards I have salad for lunch almost every day.

    Others..

    Cos lettuce, shaved parmesan, croutons (ie cubes of toasted stale bread) and Tesco Lite Caesar dressing.

    Drained tinned chick peas, sliced mushrooms, chopped spring onions, rocket (I grow this too), crumbled grilled bacon and garlicky vinegrette.

    Mixed salad leaves with cooked green or broad beans, croutons and bacon bits fried in a tiny bit of olive oil, poured hot over the leaves. Plus a sprinkle of balsamic vinegar.

    Mixed leaves, avocado, cucumber, bacon bits, garlic vinegrette.

    Mixed leaves with grilled goats cheese, dressing and crusty bread.


    If I've got leftover rice, pasta, boiled potatoes or couscous I make salads with these as well. Just depends! In summer I've always got a couple of tubs of these more substatial salads in the fridge and that what we eat for lunches, with some green salad and maybe bread on the side. My kids adore hard boiled eggs as well. Quick and simple food. :)
