    only some salad leaves today as ran out of everything, to go with chicken pasta i think

    There's some really delicious ideas in this thread!

    If I visit over the summer my DF often does a delicious warm salad of stir-fried chunks of chicken and bacon on top of lettuce leaves, cubes of tomato and cucumber and raw French beans (all HG), with honey-mustard dressing poured over the top. :drool:

    Tonight I've got lettuce, rocket, avocado and spring onions as an accompaniment to a sausage, bean and mushroom pasty / calzone type thing (recipe here if anyone's interested - I'm adding mushies as they need eating before they go manky).
    Back after a very long break!

    Today I had iceberg, cherry toms, carrot, red cabbage, tuna and a splash of balsamic vinegar.
    A waist is a terrible thing to mind.
  • Reheated bbq spare ribs cooked from fresh new potatoes salad with cider vinegar vinegarette honey mustard feta and golden tomato :).
    It's only rock and roll but I like it.

    Im enjoying this thread, decided its salad for my lunches from now on! Today I had lettuce, toms, carrot, ham & salad cream! Tomorrow might put some boiled egg in it but feel bad eating it in my office as the smell can't be very pleasant for others!

    Hello everyone, hope you are all well.

    Ive decided I need to loose a bit of weight, and have decided to eat more salad stuff, but, I quickly become bored with this and im looking for ideas to make them more interesting.

    Usually when I have salad, I would have the usual tomatoes, lettuce/spinach, onions, beetroot, cucumber, and then I would add either, chicken, ham, turkey. Sometimes I have a bit of boiled egg too.

    I dont have salad cream or mayonnaise on my salad (can only have mayo if mixed in with eggs or tuna). I will usually have a fat free vinigarette.

    Is there anything else I could have which would spice the salad up?

    Hi Jackie, do you like couscous or bulgar wheat? Both are dead easy and quick to prepare and you can throw in anything you like. I love a bulgar salad with some finely diced red onion or spring onion, parsley, bit of feta crumbled in, lemon juice, and a good sprinkling of sumac (leave the sumac out obviously if you don't have any!). Couscous is even quicker.

    Also do you like beans? You can make a lovely salad from tinned beans, or use dried and cook them yourself, add a bit of vinaigrette and some diced onion or whatever you like.

    You might want to try pasta salad too although that's no good if you're following a low carb diet :D
