summer's here....any salad recipes?

    Salad with new potatoes is good, or you could toss the potatoes in mayo/salad cream with some chives to make a potato salad.

    A tasty salad would be good with cold ham and potatoes. Some ideas here

    Do you like rice? or pasta? or couscous? any of these make good cold side dishes for ham. I would suggest you either do some roasted veg to mix in with the rice/pasta/couscous or perhaps just a salad to accompany it.
    My fave cheap rice salad is to add some mandarin oranges (some supermarkets sell tins of 'broken segments' really cheaply) and a little of the juice or syrup. surprisingly delish!

    I cook a couple of cups of pasta, then rinse under the cold tap.
    Mix in chopped
    some cucumber
    a small amount of red onion
    tomato
    Chuck in a tin of drained tuna and give it all a bit of a shake.

    Take some mayo in another little container (not everyone likes mayo) to tip onto it.
    It's gorjas! :)

    Thanks for suggesions so far.

    I forgot to mention that the food is for my family too and mostly non salad eaters. I personally love it but it is also high in fibre! So not really good for me. A small amount mixed in rice or pasta would be OK.

    We are having pasta the day before with chicken, so that is why I have gone for potatoes.

    When I have pasta meals I usually cook extra pasta for the next day to have cold with tuna.

    Cold spuds with mayo or dressing on are lovely :cool:

    I had a salad with cold broccoli in it when I was out for tea recently - surprisingly nice actually.

    Cool chargrilled peppers are good too with a bit of oil and garlic

    ok - cold potatoes - mix with some mayo, salad cream and some chopped crispy bacon.
    or - with chives, mix some cream cheese with a little mayo and season with salt and pepper.

    Don't forget that lots of veggies, not just the typical salad ones, can be eaten raw; just wash and peel (where necessary), then chop into bite-sized pieces or slice Julienne-style. Frozen peas straight from the packet don't take long to defrost, and mixed with cottage cheese, creme fraiche, or natural yoghurt, they taste delicious.
