summer's here....any salad recipes?

My OH takes salad to work every day, its usually the basics, lettuce, cucumber, tomatoes,peppers and then I try to add something else different every day so he doesn't get bored. I add olives, beetroot, almonds or other nuts, thinly sliced fennel, fresh peas, pineapple, peppadews (I have a huge stash from B&M)avocado pear, shredded cabbage, mango. He also has some sort of protein in it, frequently whatever cold meat I get reduced - I only buy the good quality ones but frequently get chorizo, salami or parma ham from the deli counter reduced, smoked mackrel or salmon, cheese including feta or cottage or leftover chicken or other meat.
I buy lettuces rather mixed bags and grow my own in summer. I get some on Saturday on the market together with the other main veggies and then buy from MrS during the week, I normally manage to find organic or TTD reduced.
The one bagged salad I do like is the caesar salads, will sometimes get one for my lunch. I know I can make it myself but its the one convinience item I buy.I was off to conquer the world but I got distracted by something sparkly

A simple basic DIY vinaigrette. 3 tablespoons of extra virgin olive oil, 1 tablespoon of white wine vinegar. Put into a small jar (replace the lid!) and shake. It should go thick and opaque. It should keep in a sealed jar in the fridge for about 3 weeks.The acquisition of wealth is no longer the driving force in my life.0 -

We're doing the usual new year health-kick & I'm terrible at knowing what food are good for me. I've also got a fussy OH so wanted to know how this would be in a salad...
Rocket/spinach
Feta/low fat mozzerella
Sweet peppers
Pasta or sliced new potatoes
Cucumber
Tomato
Olive oil & salt/pepper as dressing
...does anyone have any suggestions on how to make this a bit more exciting? And would this make a healthy lunch for us?

I think it sounds divine as it is!
One of my very favourite meals is mozzarella, on a bed of rocket, watercress and spinach with slices of ham and cherry tomatoes. So it's a bit of a variation on that.
To cut a few calories use a low fat feta/mozarella and swap the olive oil for balsamic vinegar dressing and go easy on the pasta/potatoes.0 -
You'll have to try that it looks great. For a healthier salad instead of oil use a white wine vinegar or a cider vinegar as dressing.:footie:

Thanks for the advice, that's great! I'm a total beginner to salads, wouldn't even touch a side salad this time last year haha. Trying to start this new healthy eating in our own way to make it easier0
