I love salad! In mine as well as all the 'normal' bits I like to add raw mushrooms, pickled beetroot, bean sprouts, broccoli or fresh peas.
Avocado and sweetcorn are nice, and ok in moderation, as well as olives.
I've just finished a seafood salad with muscles, prawns and seafood sticksSome days you're the dog..... most days you're the tree!0 -
one hm coleslaw recipe!
Creamy Coleslaw (serves 8)
2 tbsp caster sugar
1/2 tsp salt
1/8 tsp pepper
4 tbsp milk
125 ml mayo
4 tbsp natural yogurt
1.5 tbsp cider vinegar
2.5 tbsp lemon juice
600g finely shredded white cabbage
50g grated carrot
Whisk all the flavoury ingredients together then add cabbage and carrot until well combined.
Chill for at least 2 hours. Some grated apple added just before serving would be lovely too!0 -

Got to admit, I cannae stand olives even though they're really good for you! Peppadew peppers are amazing esp. if you like spicy. You get them in jars beside beetroot, pickled onions etc. Or from the deli counter.
Oooh, sliced pickled gherkins! I buy the jars from Lidl and Aldi - they are amazing!!0 -

Why just salad?
In summer I spend days and weeks eating gazpacho.....some how nicer than the same ingredients as a salad. Crudite and beautifully plated fruit too, are staples here.
What I would say is that relying a lot on the 'deli' style salads like coleslaw, Florida/ Waldorf while delicious are still quite calorific. Great for boosts but not daily. I make such things with yogurt for 'creaminess' on normal occasions.
I'd look at varying the ingredients of your salad, and style, so chopped and mixed one day, whole leaf simpler the next.0 -
Lostinrates, I agree with what you say about shop bought coleslaw etc but at least with hm you can control the amounts of sugar, fats etc. My advice is as natural ingredients as possible, e.g. use less sugar rather than substitute with sweetener. Maybe greek yog instead of mayo?0
