  • Im about to embark on a "clean eating" plan. I swore Id never go on another "diet" although I did lose 2.5 stone on WW 4 years ago. The word 'diet' fills me with dread!

    Why just salad?


    In summer I spend days and weeks eating gazpacho.....some how nicer than the same ingredients as a salad. Crudite and beautifully plated fruit too, are staples here.

    What I would say is that relying a lot on the 'deli' style salads like coleslaw, Florida/ Waldorf while delicious are still quite calorific. Great for boosts but not daily. I make such things with yogurt for 'creaminess' on normal occasion
    I'd look at varying the ingredients of your salad, and style, so chopped and mixed one day, whole leaf simpler the next.

    Coleslaw and curried is simply:
    Grate white cabbage, carrots and onions (or chop those finely) until the combination/mix is just how you like it. Add some dollops of any mayo you have. Mix.

    Curried is exactly the same, but mix in some curry powder with the mayo (how much depends on your taste, so try it a bit at a time). Also, you can try chucking in some sultanas, or raisins, or even some mandarins (fresh or pick some out from a tin).

    Just mix everything together and chill or eat straight away.
  • Whern I was seriously trying to diet a few years back I found that SALADS were my downfall - because I ate bread with them, just HAD to make salad sarnies. I got round it by buying Chinese leaves, and treating them like bread rolls, turning my salads into finger foods.
    A colleague of mine lost loads of weight making salads with low-fat yoghurt, throwing in whatever raw fruit & veg she could find and conning herself she was having `pudding`!
    Another colleague swore by home-made veg soups, her favourite was carrot & fresh coriander, that was lovely actually, became a fave of mine.
    I think a lot of the key to slimming is conning yourself that you AREN`T `depriving` yourself, and finding your own weird combinations that you really enjoy.

    Gosh, couldn't begin to think of all the different salads we've ever had,I struggle with salad so make it as interesting as possible! but here are frequent favourites:

    Crudite and dip. Watch the dip for calories. This is possible one of the meals we eat most of.

    I still hold gazpacho is liquid salad :D. Its all I eat on many hot days, love it, love its ease. I make a jug and drink it for a few meals till the jug is empty, then whizz up another jug. :D

    Chopped salad ( which we call little tiny cut up salad). Some how its just tastier. I often put no lettuce in, just herbs, like flat leaf parsley. Its like eating a bowl of relish and needs no dressing what so ever.

    Fennel and orange. Fresh, simple delicious. Most people add onion. Not me. No dressing, just the juice.

    Avocado and grapefruit. Current favorite and where pretty much all my fat is coming from. Alone or with watercress or mint. Grapefruit dresses with its juice.

    Grapefruit, watercress and duck ( smoked or grilled) or smoked chicken. With duck is my favourite salad of all time.

    Watermelon, a little feta, mint. ( mainly melon) feta is basically in stead of salt, use sparingly to watch waist.. Its a bowl of fruit made savoury perfect for a hot summer day.

    Nicoise,the best salad for a hungry person. Easy on the potato for me, but I add other things to boost taste quota.



    DH wants me to add the Jamie Oliver fifteen minute meal salad with with we have become enamoured. We have had it at least half a dozen times since Christmas. Its got quinoa and blackened chicken and mango, Its great but feeds an army, and I found it hard to scale down, though it lasts well in the fridge.

    Hi

    I've gone off my food a bit in this hot weather and can't really be bothered cooking.

    I'm looking for some nice salad recipes to make for dinner rather than the old boring lettuce, cucumber & tomatoes on a plate.

    Anyone got any ideas to inspire me?

    I'm the same when its too hot...much prefer a salad.


    I love using spinach leaves instead of lettuce as It doesn't taste much different but it is so much better for you and packed with iron.


    I like to grate carrot over it, some red onion, cucumber and a tablespoon of sweetcorn. For the dressing I like to have sweet chilli sauce. (I only like cooked tomato so don't use it in salads)


    Goes really well with chicken, some flaked salmon or a slice of pizza
