    I like a chilled can of peas, well drained and mixed with a bit of low fat mayo. white pepper and some finely chopped mint. Sometimes, I chuck in a can of drained sweetcorn, as well.

  • Lettuce, cucumber, tomato, peppers, rice/cous cous - savoury rive works best I think, beetroot, ham, boiled egg, shredded red cabbage and a ceaser dressing, yummy!!

  • I make "weird" salads :D. Nothing traditional, really. I like rocket, baby tomatoes, sweetcorn, beetroot (cooked, not pickled), pineapple, peppers, grated carrot, cous cous, broccoli and spring onions. It depends on what's available in the fridge and cupboards at the time. I like using colourful ingredients, as I think it's prettier and more tempting. Sometimes, I put in ham from the SC for protein.

    yes,

    thai type salad - i mix together very finely 'juliened (sort of)' celery, spring onion, cucumber, carrot, mix that with a dressing of honey, rice wine vinegar, garlic, ginger and lemongrass (in a smallish julien), chilli, fish sauce (nam pla), bit of oil, pour it over the veg and bash up some peanuts that you have gently dry fried in a frying pan (literally few seconds, dont burn them), also with coriander

    salad nicoise - red onion, hard boiled egg, tomato sliced, black olives, tuna steak (from the frozen dept for cheapness), new potatoes, romaine or cos lettuce, creutons, anchovies, serve with a oil and lemon juice vinegarette with lots of herbs

    greek salad type thing - black olives, tomatoes, cucumber, bit of feta, coriander, parsley, spring onion, serve with pitta, lemon juice and oil of course

    baba ganoush (im making this tomorrow) - aubergine cooked in oven until skins blackened, mix up the flesh only with lemon juice, garlic and tahini

    or i just sometimes throw a load of basics together - tomatoes, cue, onion, lettuce, grated carrot, celery, olives, radish, loads of herbs, parsley, basil, coriander, mint etc and put whatever dressing i want on it

    my absolute fave is ceasar salad but its quite high in fat cos of the dressing

    ive got a real thing lately for cous cous, make it up with chicken stock, then mix in, mint, parsley and coriander, spring onion, black olives, garlic, bit of chilli, cue and tomatoes. put lemon juice and olive oil in, i cant get enough of it

    Breakfast salad - cooked quorn sausage chopped into bits, boiled potatoes, boiled eggs, tomatoes, mushrooms - lightly fried, bit of spring onion. add a dressing of salad cream!


    I like colourful salads and normally chuck in whatever I have in the cupboards/fridge. Not a big fan of fruit in salads though and I make my own coleslaw.

    last night we had left over chicken, jacket pots and salad(lettuce, toms, radish, cucumber, pickled onion and beetroot)

    tonight it is home made lasagne with my salad and jp
