Change of plan at lunchtime.  Got some ripe avocado in Morries today so DH and I shared one; it was only a smallish one so  probably only about 4 syns for my (small) half!  However, forgot I had some potatoes to fry up so had those instead of the Ryvitas so saved 3 syns there, also forgot to put the olives on so another 1.5 saved!

Also I'm only putting a small of amount of chorizo in the Spanish rice tonight - the 3.5 syns will be between DH and I so only a couple syns.

Bought some quark today so will probably had some strawberries & quark for pudding today.

Today's total will be 7 syns.

I’m jealous of all the creative food on here. No matter how much I try, fruit and veg seems not to stretch far in our house. There are five of us - DS1 goes out to work Mon-Fri so only has breakfast and evening meal, but the rest of us are here for all meals. It’s shopping night on Tuesdays (Aldi) and I top up at Tesco in Sat/Sun - just a constant battle.
Did 5k run this morning and my legs are complaining!
B - grilled lean bacon, poached egg, tomatoes (S)

L - Mexican pouch rice (2.5), HEA cheese, lettuce, tomatoes, beetroot (S)

D - Aldi slimwell curry (1) with rice
    Snacks - Apple, banana
    Have a good evening all.

Are the courgette fritters a SW recipe ruby?  One of the things I'm missing from my holiday in Turkey is their mucver. They're the most delicious courgette fritters  usually served hot with a garlic and yogurt dip. Yum! I'd like a recipe please. Also, do you know we can now have 2 HEAs every day?

Thanks maman, I find it weird having 2 HEA's I prefer the balance of 1 HEA and 1 HEB but sometimes appreciate the flexibility when I'm having multiple cups of tea a day.

As for the fritters, I don't really use a recipe just
    • Grate up some courgette and potato and in this case carrots as well because I need to use them up.
    • Tip all of that into a clean tea towel and squeeze all the excess water out (it's a lovely brown colour...)
    • Pop back into the bowl and mix in some salt, pepper and any other herbs / spices - I usually add in some onion granuals or smoked paprika
    • Heat up frying pan sprayed with frylight and you can either make up small fritters or when I'm in a rush I just chuck it all in and mix it around like a bit of a hash.  I find that I don't need to add egg or flour as a binding agent but you could if you wanted a proper fritter experience.
I've also made some fritters with just courgette, where I mix in an egg as a binder and some feta cheese which is amazing.  Jack Monroe has a recipe that is good as a basis to start with, I just omit the flour because I've found you don't really need it.

Feeling a little peckish now as I had to wolf my lunch down before a conference call earlier.  Might go and have an apple with a bit of cheese to finish my second HEA for the day.

bubbs that's why I've been keeping an eye on my weight as I had been hovering around top end for a long time just before lockdown, as well as having been on holiday for the previous 2-3 weeks so was probably out of target when I got back!  I had a sneaky look this morning and I'm still heading downwards!  Now only 1.5 lb from bottom end.

Have promised DH I'll cook Cornish pasties when I get to bottom end as if lockdown hadn't happened we would have had them at the beginning of this month as I always make them when we go to holiday as our first meal!

I have to admit most of my veg is frozen except for potatoes, onions, carrots & cabbage, and occasionally cauliflower if I can get it reasonably priced.  It certainly helps to keep the cost down.  Obviously that doesn't work for salads but growing a few salad leaves in a pot helps.  Haven't bought any salad leaves for a month or more so certainly saved a bit of money for the price of a packet of seeds and still plenty left!

Oh dear bubbs. Do you know why? I'm not weighing until groups start again. I don't feel much fatter but I'm probably towards the top of range. The problem is that I've been wearing leggings around the house for weeks and they may be too forgiving.

You could stock up with plenty of frozen and tinned veg to back up the fresh stuff coxy. I quite like tinned carrots, especially the baby ones and then there's always pickles!! I never run out of beetroot, either jars or vacuum packed.

P.S. Tomato ketchup is 1 syn for a tbsp. from the syn bank!

It could well be not eating enough because you have made some changes in past couple of months. How do you do overnight couscous? Is it savoury?
