Afternoon all! Because of the rain we decided to head home today instead of tomorrow. Not much fun just sitting in the van in the rain when we were coming home tomorrow anyway. If we'd been away for another week we would have stuck it out. Got home about 4ish after leaving just after 9 this morning. Not bad as we had to get diesel before we left and then again after we'd crossed the Dartford bridge so a bit off route at the beginning and about an hour from home. We also stopped for about 1/2 hour at lunchtime.
The recipe sounds good ruby. Will copy that into my recipe document for a later date. I love aubergines but never really do much with them apart from moussaka or baba ganoush.
I had planned on getting back on plan from tomorrow but not sure that's going to happen as we're meeting up with my friend on Saturday (the one whose DH died after an op just over a year ago) and it's going to be fish & chips and alcohol! Will stick to plan tomorrow, off plan Saturday and then back on plan Sunday.
Am going to weigh tomorrow morning (at home) to see how much I've put on - I know it's a fair bit as all my trousers (apart from leggings!) are a bit tight!
Off to cook dinner - sausages, mash, veg, onion gravy.

We've had thunder and heavy rain here too. I can't believe I was in beautiful sunshine up your way just on Tuesday bubbs. ☹️
If I were you I'd weigh on Sunday and take it from there denise. You don't want to be thinking about any extra pounds when you're enjoying your fish and chips. 😋
Sainsburys wine order arriving later (25% off) but I'll be strong. 😉

Didn't have any thunder and lightening just heavy rain. There was some sun as we were coming home but it was raining again by the time we got to the M1.
Good idea about weighing on Sunday after the fish & chips! After all I am supposed to be on holiday until the end of the month, LOL!
Just having a rum & ginger beer after dinner. Will have another later to use up the rest of the can of ginger beer! Not bad for 5 syns, far less than having half a bottle of wine like last night!
We sometimes do a wine order from Aldi. They have some really good wines but of course no 25% discount with them usually but then they are fairly cheap wines.
