    Safely home from my round trip to very sunny Kettering. 🌞😁

    All went well and I was very good SW wise. SW breakfast before I left (egg, tomatoes, mushrooms). I took a rice salad for lunch which I enjoyed after the funeral with a take away Americano. Got home in time for a SW Bolognese from the freezer. I decided to have wine syns so will be a bit over syns for the week but not much. 1 syn planned for tomorrow and then reset on Thursday. 😁

    Safe journey home on Friday denise. You've been to some great places, made the most of your staycation. 😁

    ThanksΒ maman but have to say not enjoyed it as much as our French holidays but at least we've been to some places we haven't been before!

    The weather has really turned! Β There was a lot of rain during the night and early this morning. Β It's not raining at the moment but it's very grey and suspect there will be more later. Β Had planned to go into town to have lunch today but won't make a decision until we see what the weather is doing later this morning.

    So plan for today is:

    B - Fry up - bacon, egg, mushrooms, tomatoes, beans - P; S; F
    L - eat out or toasted cheese sandwich - HEA2/HEB; 3 syns
    D - cottage pie using the last of the turkey ragu I made a while back and froze - P; S; F

    HEA1 - milk
    HEA2 - cheese
    Syns - butter 3; may share a bottle of wine with DH tonight but not then a couple of rum & ginger beer so 15 or 5!

    I work in the construction world so I’m super busy at the moment, Tuesday is always a busy day so I have to be uber organised

    So yesterday’s menu

    Β 

    B: fruit and fibre milk

    L: LO stir fried veg and chicken, freddo

    T: chicken salad, pickled onions, spring onions, lettuce, toms, cucumber, red pepper, boiled egg and chicken breast – as a packed lunch as I eat it after spin at the parents.

    S: apple

    Β 

    Im feeling uninspired for lunch today, I did a BP this morning so might just have cheese and beans with it

    The weather's changed here too, keeps trying to rain but still a bit muggy. It'll soon be soup weather! I think I'll put gammon on next week's meal plan so that I can make lentil soup with the stock. πŸ˜‹

    I agree that it's hard to keep coming up with meal ideas klew, especially as I do try not to be too samey.Β  I actually enjoyed the rice salad I had yesterday as it's not something I'd eat at home. I seem to rotate my lunches round leftovers, JPs and omelettes so adding in soup will be a welcome extra.Β 

    I'm feeling so much better after my backache at the weekend. I did wonder whether yesterday's driving would set it off again but I seem fine today. 😁 Today I'll do the batch cooking that I put off on Sunday, veggie chilli and swede & carrot mash. 

    Today's EE plan-
    B NAS grapefruit, skinny syrup, banana (F), HEB porridge, HEA milk
    L- ham (P), fried veg and beetroot (S)
    D- chicken casserole (P,S)Β  new potatoes (F), cauli and broccoli (S)
    Syns- cornflour in sauce 1

    would you have a recipe for the rice salad please? i like to mix things up too!

    It was a cheat. I used a pack of free Golden Vegetable Rice from Aldi. I cooked it the night before so it was cold then stirred in what I had in the fridge - chopped red pepper, spring onions, cucumber, tomatoes and cold chicken--in the morning . The tomatoes were fairly ripe so enough juice to not bother with mayo. I just put it in a box and ate it with a spoon. Basic but tasty and quite filling.

    I've done something similar before when I've been out for the day with pasta, red beans and LO roast mediterranean vegetables (made sure they were on the meal plan for the previous day) . I used a bit of tomato puree in pasta water for dressing.

    I'm sure you'd find more sophisticated recipes online. 🀣

    Yes Maman was very sunny here that way yesterday, different today, it has thrown it down this afternoon!! Is it a long journey for you can't remember where about's you said you were, i know you have said before

    I have had a hungry day, i had overnight weetabix for brekkie, a huge "fry up" for dinner/lunch, with 1/2 a melon andΒ  we have cottage pie for tea, will post pics later :wink:

    I think BP is a baked potato! Β That's what I always read it as anyway. Β Most of us call it a jacket potato.

    We were really lucky with the weather this morning. Β Went out about 10ish and the rain had stopped and it didn't start again until after we sat down for lunch and then it was just drizzle so at least we didn't get soaked. Β It's still really grey and keeps trying to rain but it's not really coming to anything at the moment.

    Ended up with lamb hot pot with roasted honeyed vegetables, certainly wasn't worth the money! Β It was really greasy and more gravy than meat. Β Wish we'd found the Wetherspoon's - at least you know what you're going to get for your money!
