Your meals look fantastic as usual bubbs. 😋
My journey was about 120 miles each way but I did stop for coffee each way. Traffic was bad in spots but kept moving.
Sorry to hear about your meal denise. It's infuriating when restaurant meals are a waste of money and syns. ☹️ I agree about Wetherspoons, just can't stand the man that owns it. 😉2 -
Thanks Maman

I can’t believe the holiday has come to an end JD.

Morning all. After all the rain here yesterday which made it feel so autumnal (I love autumn), we have brilliant sunshine this morning!
Managed another workout this morning (4 days in a row!) and plan on a little walk this evening too which I find helps with keeping the muscle aches in the legs away. Had my porridge again for breakfast and plan on turkey stir fry for lunch and aubergine parmigiana bake for dinner which I had on Tuesday and was gorgeous so I'm happy that I made 2 portions!
Have an online conference for work over the next two days which should be funHope you all have a good day!

No idea what I fancy for the rest of the day but I need to stay away from the biscuit box 😏😏😏 - just writing that down so I acknowledge it 👍January spends - £587.580 -
I'm with you milann. I've avoided Zoom like the plague (sorry, probably not the best wording). Good luck ruby.
I love aubergines, do you have a recipe for the parmigiana?
Unless I grab some ham from the freezer, today will be an accidental Green day. I'm unlikely to want an extra HEB but it's good to know it's there if I feel like snacking this evening which is rare. I was pleased to read up that the beans I've put in the chilli (black, red, butter) are all Protein. Since they downgraded baked beans to Free, I'm never sure.
Today's EE plan-
B- NAS grapefruit, baked beans (F), bacon, fried egg (P), HEB toast, HEA milk
L- LO chickenless casserole (P,S,F)
D- Veggie chilli (P,S), SW chips, brown rice (F), cottage cheese (P)
Syns-0 (Back on 105 today)😁0 -
So far, so good - haven't had to put my camera on because they're having bandwidth issues
Recipe wise maman, I took 2 aubergines sliced into 1cm rounds, "fried" in frylite for a few minutes on each side till golden and put to one side. Add a tin of chopped tomatoes to the pan with a couple of cloves of garlic, squeeze of tomato puree, couple of teaspoons of balsamic vinegar and a pinch of oregano. Let that bubble away for a little bit to thicken and then layer it up with the aubergine in a dish. Topped with mozzarella and a little sprinkling of parmesan and baked at 200 degrees for about 20-25 minutes. Served it with some green veg on the side.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20171 -
