We've just finished dinner and have to say the chicken, leek & mushroom bake was amazing.  It was really tasty and is definitely a keeper!  Only thing I'll do different next time is to brown the chicken first and set aside and then do the rest of the base of the dish and stir the chicken back in before topping with the grated potato mix and baking.  We had it with cabbage & broccoli.

    That sounds nice Denise :D

I'll definitely be trying that denise. I just looked at the recipe and I have everything in except enough eggs. ☹️ I'll put it down for next week, suppose I could use up the egg whites in an omelette? 🙂
The pork chops were OK. They cooked well enough but I think we've gone off the taste of pork chops. I enjoy a pork roast but it's a different flavour somehow.

I quite often use pork chops in a sweet and sour.  I'm. not overly impressed with them on their own but do have them like that occasionally.

I'm not sure the eggs are essential really as they don't mix in particularly well!  Think may well be as good without them.

I wondered about that. DH doesn't really like eggs so I might give it a try tomorrow. 😁

Did you use 4 chicken breasts for the recipe denise? I usually cook us recipes for 4 but with half the meat. Then, being greedy, we eat 2 large portions and 1 left (meat free) for me for lunch the next day. I suppose I could add some bacon too or add cheese to the potatoes instead of eggs . 🤔

I actually used 4 thighs so just 2 portions, halved everything else.  I usually make 4 portions  but decided as it was the first time of making to just make 2 portions.  Couldn't find any breasts in the freezer so decided to use the thighs.  Have to say I prefer thighs to breast for most recipes anyway.  I only really use  breats for things like chicken kiev.

I think a bit of cheese with the potatoes might be quite nice but don't think it's really necessary.  If you do try that let us know whether it works!

Morning all.  Not such a nice day this morning but forecast to brighten up later so fingers crossed for that!  Always makes my mood better when the weather is better.

It's going to be a Green day today:

    B - Weetabix & milk - HEA1/HEB
    L - Caramalised French onion soup; slice bread - 0.5 HEB; S; F
    D - Lentil shepherds pie; green beans; peas - P; S; F

    HEA1 & 2 - milk
    HEB1 - Weetabix
HEB2 - slice bread/possibly Alpen Light later with a cup of tea
Syns - none planned but that may change

You must have loads of syns left denise. Are you going to use them?
I'm going to give the chicken and leek bake a go today. I've defrosted 2 thighs and 1 breast so that should be enough for the full recipe.

It's bright here today too denise. Hopefully we'll get in a short walk as I find that lifts my mood too otherwise every day feels very similar. I'd like to see a few changes in the lockdown. I've never understood, for example, why it's OK to speak to a random stranger in the queue at Aldi but not to arrange to meet a friend or relative for a walk in the park or dare to sit on a bench!!

The information that's coming out about obesity is interesting. I wonder if it'll make Slimming World even more popular. The medic speaking at yesterday's press conference made the point that losing weight needs a permanent change of lifestyle not a diet. Yay!!

    Today's EE plan-
B- NAS grapefruit, skinny syrup, banana (F), HEB porage, HEA milk
    L-  cold meat (P), bubble & squeak (F,S), pickles (S)
D- chicken, leek and mushroom bake (P,S,F) with broccoli (S)
    Syns- cornflour 1

Not loads of Syns left unfortunately quite a lot of rum and ginger beer jumped into my mouth, LOL!  Still have I think 13 syns left for today if I want them but don't think I'll use anywhere near that.  So I'm hoping for a loss this week rather than STS or a gain like last week.

Hope you enjoy the chicken, leek & mushroom bake as much as we did.

The French onion soup was a bit vinegary for our tastes so when I make it again I'll only add 2 Tbs of balsamic rather than the 4 Tbs it says in the recipe (it's in the Little Book of Lunches, don't know if it's on the website or the app as haven't looked).  It certainly didn't make 4 portions either!  We had a portion each and I think there's probably about one portion left so I whizzed it up and added some more water and will use it as the stock for the lentil shepherds pie tonight, think it'll give it a nice if a bit different taste.

I've had to rejig my menu plan as DH has been moaning there's too many vegetarian meals this week!  I think there were 4, it was iunintentional it's just as I was looking through cookery books and magazines and I just popped them into the plan without realising!  I've now moved some of them to later in the month so it's looking a bit less green in one week now.

    Denise
