Losing in Lockdown - Slimming World Support Thread

I usually just buy treats that I don't like for my DH but this week I made the mistake of buying some fruit and oat cookies instead of his usual sickly, chocolate ones. So I had one with a cup of tea yesterday afternoon and thoroughly enjoyed it. 5.5 syns!
I've given up on staying within syns this week but next week's not looking brilliant either as apparently we're on tv again on Thursday night. ⚽ Usually we go to the pub about 3 times a season but because of this 'free to air' tv post lockdown, we're on 3 times this week alone!
I'm having corned beef hash today. I haven't worked out the syns per portion but generally I chill it and shave off any visible fat and count it as about 2 syns per 100g and 1 for the horseradish for my favourite recipe. So more synful than ham hash but it makes a change. I might use a second HEA of cheese on top too.
Today's EE plan-
B- NAS grapefruit, skinny syrup, banana (F), HEB porridge, HEA milk
L- ham (P), fried veg and beetroot (S)
D- corned beef hash (F,P,S) with cauli, cabbage and broccoli.
Syns- about 5? for corned beef and horseradish0 -
I always keep my corned beef in the fridge so that I can slice the fat off too. The tin I've opened actually didn't have any fat on it just a tiny bit of jelly so it seems even leaner than usual. I only use about 50g in a sandwich which is why I've only counted it as 1 syn as is 1.5 per 100g for the lean stuff.
I'm not impressed with the ham hash which is why we usually have corned beef hash but that's not on the plan this month - we used the rest of the tin on a salad on Saturday which is why it needs using up today!

Morning all. Might have to get some corned beef next week and make a hash, haven't had one in ages and now appear to be craving one. Hair cut was lovely and relaxed, feel a lot better now and probably lost a bit of weight just through that alone

Morning all. I know what you mean about wanting corned beef now after all the mentions on here. I've found the same with the KFC! I used to make it regularly but stopped for a while but have started putting it on my menu plan again recently!

L - LO beef stew & mash from last night - P; S; F
D - roast pork dinner with roast potatoes, roast veg, green veg - P; S; F
HEA - milk
HEB - none planned but might have some Ryvita & cheese for supper!

I don't want to add to corned beef envy but the hash was delicious and I've go a portion left for lunch today. 😋 I thinned the horseradish down a bit more to make the hash wetter than usual and preferred it. I'll post the recipe I use ruby although I adapt it to be more SW friendly.

Here's the hash recipe. I've doctored it a bit to make SW friendly but you can find it on Google.
*Baked Corned Beef Hash*
Serves 4
You can serve this topped with either a poached or fried egg if you wish. Delicious!
4 large potatoes, peeled and cut into cubes
1 TBS vegetable oil (Frylight)
1 onion, peeled and diced
1 red pepper, deseeded and chopped
1 large tin of corned beef, chopped (Princes do low fat corned beef but it's hard to come by and in small tins. Denise and I chill a tin and scrape off the visible fat).
1 to 2 TBS creamed horseradish
142 ml of double cream (a scant 1/2 cup) (milk and/or water)
salt and freshly ground black pepper to taste
chopped fresh flat leaf parsley to garnish (I mixed in some dried)
Boil the potatoes in a pot of lightly salted water for about 5 minutes. Drain well and allow to dry slightly before proceeding.
Heat the oil in a large skillet (I use my wok as it's deeper than any frying pan I've got). . Add the onion and peppers. Cook for about 5 minutes until they begin to soften (or microwave them in a drop of water, much quicker) . Tip in the dried potatoes. Cook and stir for about 10 minutes until they start to turn golden brown (rarely turn brown : :wink: ). Stir through the corned beef. Season to taste with salt and pepper. Whisk the cream and horseradish together. Fold into the hash.
Preheat the oven to 200*C/ 400*F/ gas mark 6. Tip the hash into a casserole dish, leaving it a bit craggy. Place into the oven and bake for about 15 to 20 minutes, until bubbling and beginning to brown.
Note - If desired you can top the hash with some grated strong cheddar cheese and pop it under the grill to toast.
I add loads of extra veg. Yesterday it was carrots ( boiled with the potatoes) and then sliced leek, mushrooms and courgettes in with the onion and pepper. My DH doesn't eat eggs so I put sliced tomatoes and cheese on top, especially since we can have the extra HEA. I serve green veg on the side. Yesterday we had runner beans, cauli and broccoli but cabbage is nice with it.0 -
Thanks for the recipe maman, it's similar to what I usually do. I usually add carrot to the potatoes when they're boiling and then fry that off with an onion before adding in the corned beef. Never thought to add horseradish to it though so might try that next week.
Realised that I managed to stick to plan better when I don't have to think about things so while I was making my lunch today, I also made another salad for tomorrow and chopped up some fruit so it's all ready to go and I can just snack on that when I feel peckish. Any suggestions on why I feel so bloated? Drinking lots, eating minimal to no carbs, plenty of speed (gotta makeup for my bad Saturday!) so a bit confused.A smile costs little but creates much0

Thanks for the corned beef hash recipe maman, have copied it into my recipe documents and will try it with the horseradish next time I make it.
Have got a batch of savoury mince in the Slow Cooker but haven't added any potatoes to it as I want to use it as a base for several different meals, also means that if I use a carrot and swede mash topping it will make it an SP meal which at the moment could be a good thing! In fact I'm planning on using some it to make a cottage pie tomorrow evening so will probably do that as I have both in the fridge.
Planning on making a batch of veggie chilli in the SC tomorrow and portioning that up for the freezer as well.
Haven't been using my SC recently as it's been in one of the cupboards so I've swapped it for the Remoska which was on the worktop but hasn't been used for a while! Trouble is I can't keep everything on the worktop so they don't get used regularly. The only thing I keep on the worktop is my Kenwood Chef but that's mainly used with the liquidiser or food processor on top! Certainly don't use the mixer part very often as no longer make cakes and pastry (well not often, LOL!)
Sorry can't help GTQ other than to say that quite often bloating is caused by dehydration but if you're drinking loads then that's probably not the reason! Hope it sorts itself out soon.

I need to get my slow cooker out again too denise. Just realised I could have used it today to make our chilli in but oh well.
GTQ I bloat all the time.
