Gratin went down well last night and we have another portion each in the freezer for some point in the future. Also have some leftover leek from making the gratin so going to combine that with some frozen chorizo and add it to some macaroni cheese for dinner tonight.

joedenise said:Made too much hotpot for last night's dinner so have transferred half of it to a smaller dish and will be reheating it tonight; will cook some green veg, probably broccoli and green beans to go with it.
Had boiled eggs this morning so hard boiled a couple of extra and defrosted some Linda McCartney rosemary and red onion sausages and have made a couple of scotch eggs. Will cook them at the same time and they'll do for lunch tomorrow.4 -
We've been 'rubberizing' a roasted chicken this week. Chicken toasties for lunches with the bones & skin popped into the freezer until I have enough to do a pot of bone broth. It usually takes two or three chickens worth to make a decent amount of broth which then gets used as the base for lunch time soup.
Also have used up all the soup from the freezer stores, today was cream of courgette that I don't remember making! I much prefer homemade soup but OH is partial to canned H3inz Cream of Chicken, so I'll have to do some digging and see if there is a copycat recipe with a lower sodium content and more nutritional value!4 YEARS 10 MONTHS DEBT FREE!!! Hope things calm down for you soon Suffolk_lass!
Managed to eat half of my macaroni cheese last night so that will be lunch today. Have some coconut milk left over in the fridge from the mushroom soup I made earlier on in the week plus some peppers in the fridge that I have no idea why I bought them so will be mixing those together and adding a tin of chickpeas with some spices for a curry. Again, will probably end up with leftovers to somehow try and shove in the freezer but at least it gives us variety for when we're fed up of turkey and pickles after christmasEmergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20175 -
@ruby_eskimo I don't know if you realise but you can freeze coconut milk. Whenever I open a can I only use 100ml at a time so the rest of it I pour into a silicon muffin tray and freeze; each "puck" holds 100ml. Once frozen I turn out and put into a freezer bag then I only need to use 1 can for 4 curries (used to be 5 but they've reduced the size of the cans!).
I got some pork mince and lambs liver out of the freezer and am going to make some faggots for dinner tonight and hopefully there will be enough to freeze another portion for January's meal plan!

Thanks denise, I usually would do that but don't have much space in there at the moment
Not a big hardship using it up this evening - DH has been craving a curry apparently so he'll be happy

Yes it can be a bit of a problem at this time of year with all the Christmas goodies!

Ha ha - yes freezer space is at a premium in our house as well - hence the push to finish all the soup over the past few weeks!
OH did a fridge dive for cheese earlier today & was so happy today when he found the leftover wedges from last night he left them on the counter as he could not face fridge tetris again!
Lunch today was yakisoba made with all leftover bits of veg & chicken. Noodles & sauce both from the cupboard - stirfry has become our Friday lunch staple.4 YEARS 10 MONTHS DEBT FREE!!!
