Had some roast pork left over from yesterday's dinner so sliced some for lunch tomorrow and cubed the rest which I used to make a sweet and sour pork with which we had with some plain boiled rice.

I pickled three small jars of onions this week, using an opened large jar of distilled pickling vinegar I had left over from last year. It was a timely intervention as the lid had just started to oxidise. Hopefully they will be good by Christmas.
In the meantime we had stuffed peppers and a makeshift crumble made using the fruit I had stewed that was in danger of fermenting!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

We've been unusually short on leftovers the past two weeks & have been using up all the veg from the weekly box so not a lot of creative cooking happening in this household! We stuck to the 'forward' meal plan so well that we didn't need to do any reverse planning.
That is until I decided to cook on Sunday & made a vat of thai red curry with lots of autumnal veggies & chicken. 1/2 a Kabocha squash, some green beans from the freezer and 1/2 tin of straw mushrooms duly used up & it was super tasty. We had the curry for dinner with rice and then warmed leftovers in wraps for lunch yesterday (it was quite dry so no drips). When I offered to make OH a thai red toastie today he almost ran out the door, so I'll be eating the rest of it on my own!(He had a plain cheese & onion toastie instead.) I'm now left with 1/2 roast squash which I do have plans for, but need to find room in the freezer to store until OH has forgotten about it's prevalence in the curry.
The only other ingredients I'll need to plan for creatively are two small eggplants, a very large cucumber and 4 types of assorted tomatoes. Neither feature highly in the types of things OH cooks, so I'll need to get myself into the kitchen and whip up a salad and a lasagna at some point this week.
Our bi-weekly grocery order arrived today, mostly replenishing store-cupboard items & regular staples with some xmas treats hidden away until the end of the month. Looks like it will be another week of forward meal planning for us4 YEARS 10 MONTHS DEBT FREE!!! Love reading all the posts, trying to eat from freezer before the Christmas stock is bought. Thanks to all who post, it’s very motivating x5

Pulled out some chicken thighs to defrost to try and delay shopping again until next week. There are four out, which will do us for two meals as they are whoppers so I will cook all four in a chicken and (garden) leek casserole and then either curry or make pie with the meat off the other two for tomorrow.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Snap! I've got out some chicken thighs for dinner tonight. Going to use a pack of frozen root veg as well to do a tray bake. Only thing I'll need to add is some potatoes to make it a proper one pot meal. Need something easy today as have a hospital appointment for camera down my throat so wanted something really easy in case I don't feel too good after it!

We had a lazy but delicious dinner last night, box fish and fries from the freezer. We used up another couple of the never-ending purple carrots and 1/2 bag of monstrously large Brussels that mysteriously appeared in the fridge! (Both simply steamed) I don't remember buying the Brussels let alone eating half the bag, but they were definitely bagged so not part of the veg box!4 YEARS 10 MONTHS DEBT FREE!!! Thank you @rtandon27. I'm back now and all went well and I have been discharged at long last. Had my operation in February and should have been discharged in April but of course no visits to hospital at that time and have been waiting since then for a new appointment.

@joedenise that's really good news for you - such a relief! - Chicken casserole was yum - and so simple, with cauliflower and broccoli. The leftover meat and veg will go to a pie this evening as DH's eyes lit up at the prospect(!) and the sauce can be added to the two/three portions of courgette soup to pad that out a bit so we are good for lunches today and tomorrow.
