Thank you @Suffolk_lass. Going to use up the rest of the cauliflower tonight and make a cauliflower cheese using one of the packet cheese mixes from the cupboard. Will have it with some HM chips. Bought some bacon flavourings recently so think I'm going to sprinkle one of them on the cauliflower cheese for a bit of bacon flavour on a veggie meal!

Our never-ending (4) chicken thighs have now done three dinners (two in the casserole, then the other two in a pie big enough to split across two nights with plenty of fresh steamed veg) - and I still have the soup I made from the casserole leftovers for lunch today. I might make a chilli for this evening, and try and keep it small enough to just be two meals so we don't get too much repetition boredomSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Have got some shin beef out of the freezer and will also get out a stew pack I froze a while ago and will make a lovely beef stew. Will serve with mash & cabbage from the fridge which will leave about half a decent sized cabbage.
Am making burgers today with the mince I bought this week. There will probably be enough to make enough for today and another meal so they will get frozen for later in the month - or next month even!

SL - I love the thought of your never-ending chicken!
Our 'rubberized' chicken soup the other day was soooo delicious!
Had a bit of a cooking afternoon today, make some 'cream' of mushroom soup - not a bit of dairy in it, the soup part was zizzed up roast veg with bone broth & a vegetable stock cube for flavour, and then added chopped mushrooms into the smooth soup for texture. Also used up a jar of spicy tomato sauce from the store-cupboard, meatballs from the freezer along with 1/4 bag whole wheat fusilli with broccoli on the side for dinner. Just enough sauce left for spaghetti for one, so that's been popped into the freezer.
Tomorrow's plan is to use up two eggplants, a jar of roasted red peppers, a container of ricotta & some mince and grated cheese from the freezer, layered with lasagne noodles - should make at least 4 portions, maybe 6 so will be well worth the effort.
Have done a stock-take as well this afternoon so will be 'reverse' meal planning from now until Christmas, to use up as many of the assorted jars & tins as possible that have been living in the cupboard for far too long!4 YEARS 10 MONTHS DEBT FREE!!! Have been using up assorted soups, meat & green veg from the freezer along with celery and the never ending carrots from the veg box. Happy to report that the last of the purple carrots has been dispatched!

Over here we have continued with the chicken I roasted Monday and again with Salad on Tuesday and a potato and onion frittata last night. Tonight will be chilli - I have made enough for at least eight meals so will freeze some and probably give some to DS who is coming to put up the outdoor Christmas lights with DH. Great reverse engineered dinner tonight! Fajita cottage pie - use up a pound of mince turkey from the freezer, 2 pounds of potatoes, a red pepper, 2 red onions, a few stalks of celery (all from the veg box) and a jar of fajita sauce from the cupboard. Two servings for today & two for later in the week - the house also smells amazing at the moment4 YEARS 10 MONTHS DEBT FREE!!!
