Thanks @candygirl - it was awful, but I did go back to bed until really late for me - about 2 hours later than normal. Today will be my own home-made chilli - the last two portions - I gave two to DS. Also got some chipolatas out of the freezer that I might make a toad-ette in the hole with (they are only little), or get DH to make mash (he adds a stock cube to the water he cooks the potatoes in and it infuses them with flavour)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

At long last I've used up the tin of confit duck legs. We had duck fat roasties and steamed green beans on the side. It was a lovely Sunday dinner - goodness knows why I didn't cook it up sooner!
An added bonus is a pot of duck fat in the fridge that will add lovely flavour to several meals over the next few weeks.4 YEARS 10 MONTHS DEBT FREE!!! Haven't had duck for a while rtandon27 and your dinner is making me want some confit!
I've made a massive batch of mushroom soup that I'm going to work my way through for lunches this week, although I put some coconut milk in mine to make it a bit creamier. Dinner tonight is a stir fry which I picked up YS from the supermarket yesterday with some noodles from the cupboard. Have said to DH that I don't plan on visiting a supermarket between christmas and new year as we will have lots of food to use up so will definitely be coming back here to get some inspiration of what I can do with the leftovers!Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20175 -
I cooked the Hairy Bikers braised steak and onions last night for dinner but I diced the braising steaks rather than leaving them whole and also used up the mushrooms, carrots & courgette from the fridge, plus added an extra onion so there is enough left for lunch today (which will save half dozen eggs as I was going to do scrambled eggs and spinach on toast!)
For dinner tonight I'm trying a new (to me) recipe for sausage and bean bake which will use up one of the butternut squashes which I grew this year - still have 4 or 5 left to use but they'll keep a while yet thankfully.

Dinner last night used up some of the beets from early autumn that kept arriving in our veg box. At the time, I would roast them individually in tinfoil and then let cool down. Once cool, unwrapped the foil and the skins slipped of easily. Quartered and then froze them for future use. Last night's dinner was a beetroot & feta tart with caramelised red onions - super tasty! (Sauteed kale on the side for greens.)
We had the rest of the tart for lunch today with mushroom soup from the freezer, slices of roast chicken and some cucumber slices on the side.
We've been attempting to restrain ourselves at lunch and dinner so we can enjoy a cup of hot chocolate and some biscuits in the afternoon with our advent calendar chocolate! The aim is not to put on any more than five pounds over the next three weeks which is a feasible amount to loose in January with healthy eating & only slightly more exercise!4 YEARS 10 MONTHS DEBT FREE!!! We used the last of the chilli I made last night and I'm going for homegrown squash curry tonight - I have 7 (I know!) huge green Crown Prince pumpkins and a paper bread sack of butternut squash! I think I need to start using them regularly or we shall still have some next summer! - lots of leeks in the garden and onions strung up in the larder, jobs a good-un!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Morning all - we have a glut of potatoes that I need to use up (DH popped out for milk and came back with potatoes because he thought we needed some...) so it's a leek and potato gratin for dinner tonight with a gammon steak each and some other veg on the side.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20175

Ha ha Ruby - we have the same issue - somehow I ordered two huge bags of potatoes in out bi-weekly shop, even though we get potatoes every week with the veg box! What was I thinking! We'll be having roasties, wedges, mash or champ with everything until xmas!

(Also roasted the seeds with some seasoning for a yummy snack - a bit fiddly like sunflower seeds in their shells, but tasty if you suddenly feel a bit peckish in the evening!)4 YEARS 10 MONTHS DEBT FREE!!! Made too much hotpot for last night's dinner so have transferred half of it to a smaller dish and will be reheating it tonight; will cook some green veg, probably broccoli and green beans to go with it.
Had boiled eggs this morning so hard boiled a couple of extra and defrosted some Linda McCartney rosemary and red onion sausages and have made a couple of scotch eggs. Will cook them at the same time and they'll do for lunch tomorrow.
