Still had some of my leek and barley soup left so we had that for lunch again today and there is still enough for another lunchtime meal but really don't want it again tomorrow so that is going to be frozen once it's cool enough to bag up!
Dinner tonight is going to be a Pinch of Nom recipe for jerk beef stew with rice 'n' peas using up a piece of Ox cheek I got a few months ago YS in Morries - just wish they'd had more! Have never actually seen it on the shelves so was surprised to find it YS when I was looking for it - cost just over £2 which should be enough for DH and I for 2 meals each with the extra veg I will be adding to it (more than the recipe to stretch it a bit further!) so another meal for the freezer for next year.

Lunch today was a mishmash of leftovers:
Spaghetti pomodoro for me
Leftover veggie sausages (from brekkie yesterday), roasties (from sunday lunch), beans and a handful of spinach (foraged from fridge) for husband.
Dinner will be veggie burgers and garlic bread that needs using up. We're usually quite health conscious but I do like going off the rails a bit around the festive season. Pass me the Rennies!5 -

Lunch today is going to be some kimchi fried rice using up some leftover rice from last night, topped with an egg. Dinner will be a jacket potato with cheese and various salad bits, again trying to use stuff up before the weekend.

I made too much jerk beef stew last night with rice 'n' peas so that will be reheated for lunch today. Tonight will be pasta with a spicy Mediterranean sauce from the freezer. Will also do a small salad to use up the last of the old mixed leaves and cucumber.4

Does having veggie burgers for breakfast (when you actually do have oats, milk and bananas...) count as angelic reverse meal planning, even though really you're just greedy and feel crap after a whole night up with ill baby? Asking for a friend7

Last night's dinner was twice baked potatoes - The four largest from my accidental overbuy last week, rubbed with oil & baked then cooled. Cut them in half, scooped out the middle and mixed in parsley and milk poached frozen cod & restuffed the skins, then baked again with cheese sprinkled over the top. Now have a bit more space in the freezer & in the potato bowl, in readiness for tomorrow's Xmas food delivery!

Our 'rubberized' chicken soup the other day was soooo delicious!
Had a bit of a cooking afternoon today, make some 'cream' of mushroom soup - not a bit of dairy in it, the soup part was zizzed up roast veg with bone broth & a vegetable stock cube for flavour, and then added chopped mushrooms into the smooth soup for texture. Also used up a jar of spicy tomato sauce from the store-cupboard, meatballs from the freezer along with 1/4 bag whole wheat fusilli with broccoli on the side for dinner. Just enough sauce left for spaghetti for one, so that's been popped into the freezer.
Tomorrow's plan is to use up two eggplants, a jar of roasted red peppers, a container of ricotta & some mince and grated cheese from the freezer, layered with lasagne noodles - should make at least 4 portions, maybe 6 so will be well worth the effort.
Have done a stock-take as well this afternoon so will be 'reverse' meal planning from now until Christmas, to use up as many of the assorted jars & tins as possible that have been living in the cupboard for far too long!Grocery Challenge 2024

No leftovers here! As it was just the 2 of us we had lamb shanks in rosemary and mint gravy! Two portions of gravy frozen for another day. Only cooked enough potatoes and veg for the day too so no leftovers there either!
