There is a good thick slice of raw lamb leg which DH cut off before I roasted the rest of the half leg which I will turn into an Irish Hotpot in a day or two but need to get some more veg for that (although I'm going to have another look in the freezer to see if I can find some more root veg in there - I'm sure there should be but couldn't see it earlier).

We just eat junk yesterday, apart from lunch, with no proper food in the evening (except DH finished a chicken I had not processed before binning the carcass - I can honestly say this is a rare thing). Turkey soup has about 4 portions to go and enough white bread for one more sandwich each! - favourite things about Christmas leftovers. Dinner last night was dirty burgers, fries and onion rings - rolls were hm, burgers were hanging around in the freezer from Summer bbqs and the pulled pork topping was one of 2 tubs of leftover pp from a joint I'd slow cooked and pulled in early Dec. Very tasty and made a nice change
Today should see (fingers crossed) the last of the Xmas day meat be consumed for lunch. If not I will freeze any remaining small bits to use in risotto or bubble and squeak. We're having a medley of meals at the moment, yesterday was a pesto pastry bake ( puff pastry with pesto, chopped chicken from a whole chicken I slow cooked, jarred red pepper, a loose large tomato, and a ball of mozzerella and some grated chedder). Great way to use up leftovers and odd veg. served with some tinned potatoes I roasted.
Today we've had leftover buffet bits, cheese & crackers for lunch, tonight we're having 2 ready meal shredded duck noddles with some leftover duck spring rolls and prawn crackers, I'll make the kids some noddles with sliced turkey and veg.
Eldest son wants to make homemade chicken nuggets after making them at school before Christmas so he can use some chicken breasts from the freezer tomorrow, we'll have with chips and frozen veg.
Then pizza on Thursday evening which are in the freezer.
I'm collecting from Mr T on Thursday night to distribute the waste food via Olio, so need to make space in case there is any more meat & fish that I can use. Does anyone else use the app??
I've got some mature cheddar with balsamic onions to use up, it's only me that eats it as it is. Thinking of making some cheesy bread with it but need some other ideas as it's a large chunk.Grocery Challenge 2024

Lunch today was most of the Xmas day leftovers - phew - tomorrow's lunch will be the last of the honey mustard parsnips from xmas day and the last of the butternut stilton tart from yesterday.
So that we don't get festive fatigue, dinner tonight will be some baked salmon fillets, homemade wedges and pan-fried kale with leek.4 YEARS 10 MONTHS DEBT FREE!!! I used the thick slice of lamb leg which DH cut from our joint at the weekend and made Irish hotpot. Also used up the last of a bag of casserole veg from the freezer and some of the pearl barley from the pantry. It made so much that we will be having the leftovers for dinner the day after tomorrow as I've already got tomorrow's meals defrosting!

We used up a tapas pack of Spanish meat and cheese, other savoury titbits and a pack of smoked salmon with homemade flatbreads - I bought DH a mould thing that sits on the hotplate like this - they come out a uniform size with a pretty pattern on them!
