Have had to change my meal plan after discovering what I thought was a pork joint in the freezer turned out to be a half leg of lamb! I got DH to saw an inch thick chunk from the top which has gone into the fridge and will be used along with some pearl barley from the cupboard to make an Irish hotpot.
We're having the joint roasted tonight with roast potatoes, roasted carrots, onions & peppers, braised red cabbage and mashed swede from the freezer.
Leftover lamb will be made into shepherds pie for dinner tomorrow night (can't stand cold roast lamb which is what I'd normally do with LO roast served with chips and pickles).

Another day of Xmas dinner leftovers for lunch and cheese and crackers for supper here.... and panettone for breakfast
(the latter has all gone now, thankfully)

Another stuffing and cranberry sauce sandwich for lunch today! Yum
Dinner was shredded hoisin chicken in pancakes with cucumber & pickled red onions. The pancakes were serious work, but super tasty and soooooo much better than storebought!
We've made our way through most of the tasty sugar laden treats & our joints are suffering for it, so back to normal vegetable centred eating from tomorrow which should increase our energy levelsNothing like channeling a bit of inner holiday sloth to remind us how good it feels to eat for health!

Roast lamb leftovers turned into shepherds pie for dinner tonight. There is a good thick slice of raw lamb leg which DH cut off before I roasted the rest of the half leg which I will turn into an Irish Hotpot in a day or two but need to get some more veg for that (although I'm going to have another look in the freezer to see if I can find some more root veg in there - I'm sure there should be but couldn't see it earlier).4

2 eldest kids and DH had Xmas dinner leftovers in part baked baguettes which have been hanging around for lunch - again. Did cook some extra pigs in blankets to top up the supplies for them
I had leftover roast chicken, an omelette (ood eggs) and lots of broccoli which I bought a week ago, so needed using. Number of tubs in the fridge is now at a much more respectable level. Haven't decided what to do for dinner yet - depends on how much chocolate people eat between now and then......

@C_J - we used this recipe for both the filling and the pancakes, but substituted leftover cooked chicken for the goose (much more affordable
) - the pickled pink onions were tasty as well, but I cut the recipe down to 1/4 which is more than enough for two people! The pancakes were super easy to make, but LOTS of work - a good weekend afternoon project!
Today's holiday project was to transcribe Dam3 Mary'$ tart from her M..y saves xmas show - can you believe that recipe was not on the website but all the other ones were! So I'm now guessing as to how many mushrooms we will be adding as well as how long the second bake on the pastry is! 15 minutes to go until we bravely tackle that little project - a great way to use up the large piece of Stilton I was possessed to buyand another of our never-ending butternut squashes.

RED CABBAGEWe shred red cabbage finely and fry with onions, sliced apples - (a mixture of Bramleys and eating apples is best) and add some chopped frankfurters or worked sausage. . Add a tiny drop of chicken stock to prevent the mixture becoming too dry and serve with mashed potatoes (or crusty bread).
Alternatively shred finely and use in coleslaw with sliced apple, carrot and finely sliced raw Brussels sprouts, adding a little finely pared lemon rind to give it a gentle picquancy.. it makes a lovely colourful dish at this dreary time of year.3 -
