    Roast lamb leftovers turned into shepherds pie for dinner tonight.  There is a good thick slice of raw lamb leg which DH cut off before I roasted the rest of the half leg which I will turn into an Irish Hotpot in a day or two but need to get some more veg for that (although I'm going to have another look in the freezer to see if I can find some more root veg in there - I'm sure there should be but couldn't see it earlier).

    How did you make your pancakes, please? I have some shredded duck to use up and would really like to make Chinese pancakes with it, but have never tried making my own pancakes/wrappers from scratch before. Advice gratefully received!

    @C_J - we used this recipe for both the filling and the pancakes, but substituted leftover cooked chicken for the goose (much more affordable :wink: ) - the pickled pink onions were tasty as well, but I cut the recipe down to 1/4 which is more than enough for two people!  The pancakes were super easy to make, but LOTS of work - a good weekend afternoon project!

    Today's holiday project was to transcribe Dam3 Mary'$ tart from her M..y saves xmas show - can you believe that recipe was not on the website but all the other ones were!  So I'm now guessing as to how many mushrooms we will be adding as well as how long the second bake on the pastry is!  15 minutes to go until we bravely tackle that little project - a great way to use up the large piece of Stilton I was possessed to buy ;) and another of our never-ending butternut squashes.

    The red cabbage still remains uninspiring...

    RED CABBAGE 
    We shred red cabbage finely and fry with onions, sliced apples - (a mixture of Bramleys and eating apples is best) and add some chopped frankfurters or worked sausage. .  Add a tiny drop of chicken stock to prevent the mixture becoming too dry and serve with mashed potatoes   (or crusty bread).

    Alternatively shred finely and use in coleslaw with sliced  apple, carrot and finely sliced raw Brussels sprouts, adding a little finely pared lemon rind to give it a gentle picquancy.. it makes a lovely colourful dish at this dreary time of year.

    Only two of us here - no huge amount of food bought for Christmas so today is a meal from the freezer - sausage rolls + will use SS potatoes + needing to be used veggies.
