I cooked a gammon joint yesterday so today I am making a lentil soup using the stock. We'll have some for lunch and the rest will be portioned and frozen for future lunches.
DH has sliced the remainder of the joint and we'll be having some cold tonight with chips, beans and mushrooms. Will freeze the rest in batches big enough for a couple of sandwiches which can be used for future lunches. Quite a good value joint for £4 ish.

The thing with these gammon joints is to remember to soak them overnight in cold water first if you want to use the subsequent stock for soup, otherwise I find the liquid can be too salty. Which can be hard to rectify. But I agree, they can end up being good value for money. The gammon has a lot of flavour so a little generally goes a long way. Always worth snapping up a cheap one!3

We had a pair of salmon fillets last night, also using up some Brussels, but these were post the 8p ones. We just like them. This morning I have liberated more space in the fridge, by making Leek and potato soup, with the middle of the celery for added veg!
This evening, with my evening study group, it's all a bit time-pressured, so we will use up the two burgers that for some reason, were frozen as a pack of four. The same thing happened to the brioche buns so they will be used uyp with the remaining salad leaves, mild onion and some sliced yellow bell pepper, and bingo, we have a simple, quick supper. If Mr SL is still hungry or in need of a snack, there is cheese and crackers, plus a few apples (in the fridge for a month!) and the remaining outer sticks of celery.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

I had the brainwave last night of turning mince into mini burger patties rather than meatballs to go with pasta - the altered shape made them quicker to cook which is always an advantage, and they got a nice area of caramelised flavour on the surface too. The mince was from the freezer as was the accompanying tom sauce, and the pasta was some 50/50 stuff (white and brown, I think) from a box bought cheaply in FF's a while ago which I suddenly recalled I had.
I've got the usual couscous lined up for this evening - with halloumi I think, always a favourite option, and as I made use of Lil's 15% off offer last weekend...I really must remember to dig out some of those frozen pomegranate seeds to throw in there too.
I should also set a reminder to check the meal plan for later in the week when I get in this evening as well - as there will be items to get out of the freezer for tomorrow and thursday I think. This week our so-called meal plan will be one day at a time! Some ridiculous work commitments have taken over my week, but hey, it may amount to a small sum for my mortgage overpayment pots! Always up for a bit of unplanned 'fun' at work 🤣
So Monday being our veggie day, we had some higgidy spinach and feta pie for dinner. OH also decided he fancied some gammon so a piece was added to the meal - defeats the purpose of veggie day but some weeks I have better battles to fight!
Tonight is Fish day and while I'd prefer steam baked prawns & whitefish parcels with veg, OH has suggested a much more expensive fish & chip supper - I've counter-proposed box fish & chips from MrL with a fresh salad to start! I guess it comes down to what time I get home! Needs must.4 YEARS 10 MONTHS DEBT FREE!!! Stir fry here tonight to use half a savoy cabbage up. The rest will probably go for a dinner at the weekend. Turkey dark meat from the freezer for protein and likely some sweet chili sauce for taste. Hoping half the turkey can go into a pie tomorrow as the one I made last week was delicious. I’ll omit the full story about not knowing that there needed to be baking parchment in between the pastry and rice when blind baking !!!!Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

Couscous last night did indeed feature some of the pomegranate seeds - mixed through the couscous with loads of chopped parsley and some lebanese style seasoning. Veg was half a pack of mushrooms, half a pack of mange tout and a red pepper, and the protein was halloumi as planned. A scattering of toasted seeds, and a drizzle of that slightly addictive cruc1als yogurt mint dressing - very tasty indeed!
I remembered to get the half pack of chipolatas out of the freezer so we are on for sausage, mash & beans tonight I think - and I may well go the stir fry route tomorrow to use the last of the week's veg plus some of the red cabbage (yep - still the 8p ones on the go!), if so I'll nab a tub of turkey chunks from christmas out to go with that.
