I took from the freezer today, ham bits, dark Turkey meat, spiced wedges (yep lazy) and ham stock. Ham and stock went into a pea and ham soup (with split peas too) which my OH says he doesn’t like that much, Turkey and cranberry pie with the wedges was delicious and left overs for tomorrow lunch.Lunch was an omelette with the mushroom I grew in my bathroom from a kit I was gifted at Christmas, using 5 of our chickens eggs.And on account of finally having peanut butter in the cupboards again, I had a really yummy bowl of porridge for breakfast with flax and chia. Hurrah for peanut butter stocks being replenished - I like a blob of it on porridge, too!
I dragged what I suspect is the last tub of ragu out of the freezer for tea last night - with spaghetti. This evening is going to be the tuesday staple of couscous salad - I must remember that I have frozen pomegranate seeds to add in to that as well, after MrEH patiently winkled them all out of the one I got in a £1.50 box before christmas! Veg will be mushrooms, red pepper and chickpeas, and I've got a huge bunch of parsley to add a handful of in as well. We had the loveliest smoked tofu with our bowl of noodles and veg last night! I bought some smoked extra firm tofoo on a whim. OH cut it into fingers and instead of frying it, baked it on a parchment lined tray with some spray oil. I think he did it for 10-ish minutes at gas mark 6 then turned it off and left it in there for another 10-ish or so while we prepared the noodles and veg. Assembled into a buddha bowl. It was good fodder for an empty stomach, simple but tasty!4 YEARS 10 MONTHS DEBT FREE!!! All pre-cooked and out of the freezer for both lunch and tea today
Tea;-Chicken stuffed with mushrooms and wrapped in bacon, mash, veg, followed by proper custard, a blob of crème fraise and peach granita on the top.
Lunch:- was turkey soup, bread rolls, hm walnut and coffee buns - easy peelers from the bowl
I've done something to a knee today. It was to be replaced in 2020, pre-pandemic, but I cancelled it as DH needed a hip doing and we can't both be off at the same time. I was advised to wait until it hurt - today 'hurting' is an understatement especially if I move.
The only upside I can think of at the moment is - Thank goodness that batch cooking is a way of life for me, I probably have a couple of months of meals tucked away in one form of another.6 -
Same old porridge again tonight, lunch was left over pie and dinner was jacket potatoes with beans and cheese. We had planned a broccoli and cheese bake but I worked late and just didn’t find time.Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

@Suffolk_lass That is not being a drama queen at all. Does he usually freeze in such dangerous situations? I’d be really upset too. I hope your asthma has died down a bit.

Today is all from stores;
* Boiled egg on toast, coffee
* HM soup and a roll
* leftover paella, or JP with tuna (depends what DS wants as only one portion of paella left, and I'm not fussed either way)

Now in preparation for a nasty procedure so eating a low residue (no fibre) diet. Blimey, not my usual. I am baking bread so I can have a chicken sandwich for lunch and we will have pasta with chicken and cream cheese cheats white sauce this evening. I'm going to risk a teaspoon of pesto stirred through as the seeds, veg and nuts in it are blitzed. Oh dear SL - that doesn't sound like fun.
Totally forgot those pomegranate seeds last night, in spite of remembering them on the way home! Hey ho - they are after all frozen, so another week or so makes no odds! A massive red pepper, a tin of chickpeas and the last of last week's mushrooms made a lovely topping for the couscous though with halloumi.
Sausage and mushroom risotto on the cards for this evening - a pair of leftover sausages from the freezer and the last of this week's mushrooms this time, plus some shallots from an 8p bag.
