Lamb was really delicious on Sunday evening. We never buy lamb so it was such a nice treat.Last night was left over bolognaise from Saturday which I served with heaps of pasta on account of another long run.We’re out of shop bought bread so I made a loaf yesterday and whilst that was in the oven cooked some muffins having finally used up the 5 black bananas that have been slowly deteriorating on the side. I also very speedily prepped the tuna pasta bake which is tonight’s dinner so it could be cooked with the bread and muffins and everything turned out a success.Lunch yesterday was omelette with some straggly spring onion, soft cherry tomatoes and cheese and today was jacket potato cheese abs beans, with 1 of the JPs I cooked in the log burner the other night. They were perfect unless you are desperate for them to be crispy as these weren’t but perfectly cooked through. Another option for Sunday night prep where I literally do nothing other than double wrap them in foil!Dinner is aforementioned tuna pasta bake.The fridge is embarrassingly empty 🤣 A few more days to go!
Plan for tomorrow is lamb stew, does anyone have a lamb casserole recipe or do I just follow any of the above?Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

Perhaps not the right forum to include this but i know somebody who if she doesn't have quite enough beef chunks to cook or freeze for a casserole she will economise and include some beef mince in it as well to help stretch it. I know some people use lentils to help stretch Spag. Bolognaise mixtures but might be worth having this tip in your armoury.4

@StickyTheStickInsect, I microwave the potatoes until soft inside (usually 4-8 minutes depending on the size of the potato), then put some oil and salt over them and pop them in the air fryer for 15-20 mins. Our electricity network has sent us a potential storm / power cut warning for this coming weekend & into the early part of next week so another good reason, as we have a gas hob , to have some small ready made portions of easily cooked meals that can be quickly reheated in a sausepan even if the microwave and electric oven are out of action.Perhaps need to bring forward the next washing machine load though. Doesn't do any clothes much good to be stuck continually in water for a couple of days!7

My quest is to live mainly from the leftovers in the fridge this week after a weekend of family.
Yesterday lunch was pate, toast, fruit from the bowl. Tea was sausages and roast veg for me, trout and chips with veg for DH followed by some HM black cherry ice-cream.
Today: lunch was scrambled egg on toast, hm ginger buns and fruit - mainly easy peelers/grapes. Tonight, tea is puff pastry hosting, chicken mushrooms, peas and sweetcorn in a white sauce for DH, I'm having roast veg with Roquefort cheese scattered in it, followed by HM vanilla ice-cream.
I put a rice pudding in the ironheart when I came indoors but I don't think it will be ready in time, hence the ice-cream but I'll be using the strawberry jam intended for the rice pudding over the ice-cream.
Space is appearing in the fridge. I just need to prioritise what needs using up first so nothing is wasted - milk comes to mind.

Is anyone other than me running into the problem of not fancying what they have put on the meal plan?
