We had some of the leftover casserole last night and there is still more - so today I will scoop out the remaining meat and veg and pop them in a pastry case (hm pastry) and the sauce can be added to the leftover veg and slackened to make soup. Still got magic bag veg to use up so no shopping trip today.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Morning all. Had some leftover veggie curry for dinner last night from the freezer which I think tasted even better the second time around 😋 Tonight it's cottage pie using stuff we already had in. I always think curry tastes better after it's been in the freezer @ruby_eskimo.
Lunch today is a vegetable and pearl barley soup from the freezer and dinner tonight is spag bol, the bolognaise sauce is also from the freezer so just a case of reheating the sauce and cooking some pasta! Nice easy day.

Some great food being had by people over the last few days!
I dragged the leftovers from last Sunday's lamb out of the freezer for Friday evening - turned it into a curry and had with dhal (been thinking about making dhal for ages!) and HM flatbreads. One portion of dhal back into the freezer but that's fine - I might even use that up as a tea for me when we're eating separately one evening. Then for Saturday evening I made a "parmagiana-ish" with previously roasted and frozen aubergine slices - threw some cooked pasta into it as well to make it a little more substantial and it was delicious - worked really well.
This evening I'm going to do the jerusalem artichoke gratin I've cooked before from the River Cottage Veg book - that will go alongside cardboard box fish from the freezer and some veg.
Almost forgot this was a veg box week and managed to shop without taking account of it, but fortunately it was a bit more of a "routine veg" week than some, so it will all get incorporated in easily enough. We did get best part of a kilo of parsnips too so there might be some more soup in our future!🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

Very MSE dinner tonight - soya mince chilli. Mince from freecycle, onion from my dad (frozen), mushrooms, pepper and chilli from Olio. Just the tomatoes and kidney beans have been purchased. In the slow cooker currently. ETA to be served with jacket potato from freezer (potatoes also from Olio).
Am going to the office tomorrow for the first time in almost two years so tonight I need to prepare breakfast and lunch and think about what we will have for dinner that OH can do or that can wait until I get home. Feels very odd! (Also need to find work shoes as I have spent the last two years in walking boots, wellies or slippers and have no ideas where any other shoes are!)3 -

Pastry:- my DH loves a square of puff pastry, I score it about a centimetre on all four sides, put the filling in the middle, even the veg and potatoes and it comes out looking like a giant vol-au-vent. - but I'm sure you already know this.3 -
More food today to use up veg in the fridge. Dinner was leek and red pepper curry with rice, toasted almonds and naan breads (rescued from the freezer). Pudding will be more of the apple crumble and vegan cream from the fridge.

I made soup using the courgettes from my magic bag, plus a bag of prepped potato DH had stashed and forgotten, in addition to the usual carrot and onion base. In went the sauce from the casserole and the lumps were strained to go in the pie. I make mine in a cast iron pot and then blend it with a stick blender. No room for further gadgetry here.
In the end we were both all beefed out so had the rest of the near-compost quality cauliflower with macaroni cheese, and then a scoop of icecream with 1.5 ginger biscuits each (ahead of the low/no-carbs regime that starts on WednesdaySave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
