We are having beef casserole this evening (with visitors. I have used shin and braising steak. Hopefully there will be enough left to decant and pop a scone/cobbler lid on (I hate dumplings) for tomorrow.Save £12k in 2025 #2 I am at £2664.85 out of £6000 after March (44.41%)

surplus of eggs here, scotch eggs tonight using some "on offer" pork mince plus the usual herbs/breadcrumbs.
I found a tin of condensed milk at the back of the cupboard, I've turned it into salted caramel, we'll have some of it tonight over a baked banana, with vanilla ice-cream and a drizzle of melted 'cooking chocolate'
We have friends coming Monday so if the dessert works I'll have a repeat dessert on Monday using the rest of the caramel. Just wondering if it needs a splash of rum added

We have leftover beef casserole from last night so I suspect we will have that this evening with freshly cooked veg (the rest can go in a soup) and two small portions of crumble that we can have cold with a bit of cream. It will be a light day for food as we all eat 3 courses last night and I know DH and I were feeling too full for our own good by bed-time! Seeing what veg I can use up today. My veg box doesn’t quite stretch to two weeks anymore, but having twice as many is too much. Will try for the smallest box every other week to fill the gaps and see how that works out.Anyway, box comes Thursdays, so all meals being based on veg in the fridge and fruit in the bowl. Lunch was leek, pea and cheese orzotto, with yogurt and grapes for after. Dinner is roast chicken (leftovers from freezer) with sage and onion stuffing, hm Yorkshire puddings, roast potatoes, broccoli, carrots, parsnips and a small amount of red cabbage I defrosted but was too much for dinner yesterday. today i'm making the corned beef hash and pasta bake for Monday/Tuesday. lots happening next week hopefully the floor for the lounge is being delivered and we need to get the walls finished and really dry before it can be installed if i'm lucky maybe by friday some of the stuff piled up everywhere will be able to go back into the room it came from! so it will be good to have some things ready to reheat.
corned beef is corned beef (delivered last week), potatos (from the sack), onion (from the sack), carrot (delivered last week), tinned spinach (from the pantry), beans (from the pantry), a poached egg (from the neighbour), pickled red cabbage (from the neighbour)
pasta bake is tins of tuna, mackerel and maybe sardines, pasta, tinned tomato (all from the pantry), onions (from the sack), frozen peppers and maybe sweetcorn (both delivered last week), some cheese on top (from Christmas/freezer)

Please consider buying some pet food and giving it to your local food bank collection or animal charity. Animals aren't to blame for the cost of living crisis.4 -
Scotch egg was good, the recipe I've used before and it came from you tube.
1kg mince did enough portions for 8 large scotch eggs, used two last night and froze the remaining six as 'pork balls' for use another day.
The dessert of bananas, tasted okish. the banana disappeared under the ice-cream, sauce, and chocolate - not for friends tomorrow, recipe needs tweaking.
Been a bit on the go all day today, just come in and realised no one has been feeding the woodburner since breakfast. Just relit it, hopefully its oven will be hot enough to cook a bread/butter pudding for tea as I've a few slices of bread that need using up. I'll add a bit of mincemeat left over from Christmas. In the famous words of Blue Peter the rest of dinner will be 'One I made earlier' but at the moment it's still in the freezer.

Freezer food tomorrow: veg soup for lunch and bolognaise sauce for dinner. Nice easy day, just reheating and cooking some pasta.

An entire meal plan to prepare and after a really busy day I have no desire or energy to do so!Probably will need to make some carrot and coriander soup tomorrow, this is the times I wish I had a ninja processor so I could just lazily get everything prepped and then switch to the soup mode (sure I’ve read this) and it’s so minimal effort!
