    DH had a CPD webinar tonight so he ate his tea in front of the computer, leftovers from a couple of nights ago with a pastry topping.
    I raided the veg drawer and made a coleslaw out of bits and pieces that needed using up, less than half a red pepper, a couple of tomatoes, stick of celery, half an onion, cabbage, and a bit of chilli. 4 olives. Surprisingly tasty when all covered in mayonnaise. 

    Suffolk_lass:- good luck with the lunch for 20 tomorrow, hope all goes well.

    Got a TGTG magic bag last night from Budgens - first time we've had one from there and probably won't bother again but it had some packs of corned beef and chicken breast in it.  A pack of each has gone in the freezer and the other two we'll be using for lunch today.

    I'll have mine with some butternut squash chips (from LO squash which I haven't really decided what to do with yet!) plus some salad.  The lettuce was also in the bag - had to take 3 layers off it which were going a bit yucky but other than that OK.  It'll do a few days so the lettuce I bought a couple of days ago will be OK until after that one has been used.

    Thank you both. All ready. Marinated a pack of (24) chicken thighs in olive oil, salt, pepper and a few chilli flakes - spread them on a bed of onions, carrots and Crown Prince Squash, similarly sprinkled, across three roasting trays. Prepared potatoes and savoy cabbage to serve with. I will make up a vegetable stock and thicken it to add for those that want it with gravy (it is gravy, not sauce here). My friend has bought a mix of frozen and fresh berries, Greek-style yogurt and meringue nests for their pud. No biscuits to have with coffee/tea after that lot!

    Last night we had a salmon fillet (the size of a pack of playing cards), roasted in foil with a dob of butter, salt and pepper and had it with the butter "sauce" over steamed savoy cabbage and peas. Day 2 or the light eating plan. I had to top up with a small piece of cheese and an apple but that was all yesterday. Already starting to feel lighter. I might weigh in shortly. It was delicious and simple but only needed a starter plate. The dishwasher was nearly empty this morning!

    Didn't manage to eat all of the veggie stew last night so leftovers will be lunch today.  Dinner is home made pizza as requested by DH so a great opportunity to use up some cooked meat and veg.

    Sounds like you are very prepared Suffolk_lass.

    Lunch will be the last of the veg soup I made the other day and salad with salad cheese and hummus for protein. 

    Dinner will be harissa root veg stew with a tin of beans (not sure what I have in cupboard) as protein which I will chuck in slow cooker at lunchtime.  OH is on a fast day so will have chicken breast and veg for dinner.

    Worldwide events are making me quite nervous which feeds into my "stocking up" tendencies so I have placed a few orders with Approved Foods.  It's all stuff I will use (and lots of cat food!) but means my cupboards are quite full now.

    Can you really make chips out of butternut squash? Do you fry them in oil? I've done parsnip chips but that's all.

    I now have a freezer that is stupidly rammed as well as my veg/fruit box to use up and very full cupboards.  Everything we eat will need to use up what we have in until I can make some space!
    Dinner tonight was burgers, in burger buns with chips, sweetcorn, peas for DC (all freezer) and pickled beetroot with hm coleslaw (to use up the cabbage/onion/carrots from the veg box).  Pudding was an apricot and white chocolate cake (Jack Monroe recipe), but unfortunately I have too much of it and I had to ram half of it into my overflowing freezer!  Got some chicken thighs out of the freezer to cook for tomorrow's dinner, but need to get lots more out in the next week to make some space.

    Lamb steaks, dauphinois potatoes and veg for dinner. 

    Glad to be rid of the cabbage we had in the TGTG bag last week, the cream from the freezer and using up lots of potatoes. There isn’t much of the bag left which is good as I managed to grab another for tomorrow :)

    Indeed you can.  You can also make them from carrots or swede!  I've got an air fryer so used that but if I was using the oven then I'd oven cook them.  I don't use a deep fat fryer at all.

    I looked online and it said there was no need to par boil but I will definitely par boil next time at least for a few minutes as they had 30 minutes in the air fryer and they weren't all cooked only the very thin ones!  Have to say they were very tasty.

    Still using stuff from the freezer!  Yesterday I got out sausages for breakfast, HM burgers and buns for lunch and couple of chicken breasts for dinner tonight.

    The chicken breast was chopped up (once defrosted) and marinading in the fridge in yoghurt & curry spices ready to make butter chicken for dinner tonight which we'll have with some rice for dinner tonight.  May have another freezer dive and see if I've got any naan breads in the freezer if not I'll make some flatbreads to go with it.
