Big stew for dinner today (in the slow cooker) to use up lots of veg. Beans in it for me and everyone else has chicken thighs.

I threw in Jerusalem artichokes, cauliflower florets, cauliflower stems and the middle stem from the leaves (the leaves I saved for a stir fry on Monday) and leeks. Will throw in a few peas closer to the end as DC are addicted to them and some veggie dumplings 30 mins from the end that I pre prepared yesterday.

Macaroni cheese for lunch (made it yesterday in a fit of organisation) which we will have with carrots and broccoli.

I still have Jerusalem artichokes, a couple of leeks, 1.5 cabbages, carrots, salad leaves, cauliflower leaves, a small handful of broccoli florets, 2 huge red peppers, a whole celeriac, a pack of mushrooms as well as coleslaw left over from yesterdays dinner. I don’t think I’ll be needing my usual size veg box on Thursday at this rate! Will make a huge stir fry on Monday to use lots of carrots, leaves/cabbage, mushrooms and red pepper. Still need to plan the rest of next week, but tempted to make a celeriac soup as I’ve never made one for a lunch, but I think my freezer might disagree with me there.

Decided to try TGTG again and have bought two magic bags to collect this evening.  One is from a big Mr M, one is from a Mr M at a garage close by to the big Mr M.  Hopefully one of them will be good!

Having an italian night tonight so making bruschetta with ciabatta, tomatoes and shallots from Olio.  I will have some fresh vegan pasta (also off Olio) and OH will have YS wood fired pizza with extra toppings.

Had a bit of a mishap earlier - I was lucky enough on Tuesday to collect a small Victoria sponge on Olio and knew I wouldn't be able to decide who could have it so I kept it (that's my excuse).  Still almost half of it left and we accidentally left it out - found the cat licking it through the gap in the cardboard box!  Still could have been worse, we might not have noticed and then eaten it!

Ciabatta ended up being cheesy garlic bread which was a bit too moreish!

Mr M's bag was okay value - 5kg of potatoes, 3 packs of pink lady apples, oranges, red onions and some herbs.  The M Daily bag was actually better value (for OH anyway) with a pack of cheese and onion slices, sausage and mash, piri piri chicken pieces, pack of peppers, swede and carrot and carrot batons.  Will probably not bother again unless I am in the area though.

Was going to do a roast pork dinner today but couldn't find the joint in the freezer so ended up getting out a couple of pork steaks instead.  Will do a maple syrup roasted vegetable tray bake to have with it.

Carrot and coriander soup in the soup maker for lunches this week - using up carrot batons and red onion from TGTG bag, potato and coriander from Olio.  Will get the slow cooker going with a stew for dinners / freezer shortly with a stew pack from Olio.

I make a dish with mince cooked up then rolled up in pancakes and baked with mushroom sauce over the top which OH has requested as we didn't have pancakes on Tuesday.  As I haven't got any beef mince in he has agreed to try it with soya mince rehydrated with meatless beef oxo stock cube - am hoping he likes it as it will be another non-meat dish I can add to the meal plan and is a store cupboard meal with the exception of the mushrooms which I always have in and eggs which we get from the hens.

I have half a pumpkin to deal with so have just roasted half, and prepped and frozen the other half (quarter!). I have more chicken thighs than I used for the lunch on Friday so will cook these (freeze a few) and see if DH would prefer a curry or veg with chicken (I probably know the answer). Thought so - curry tonight, possible stir fry tomorrow

I popped on the scales this morning (been on the regime since Wednesday). Just over 6.4 lb off so far (only so much because I am so fat atm!). Enough encouragement to stick with it. Soup now, I think, then some seed planting!

tiday will be fish chips and beans
tomorrow I’m cooking cottage pie which I think will feed 4 plus another for 2

It's based on a Slimming World recipe.  It will just be some veg from the fridge chopped up and then tossed into a bowl with about 1 Dsp maple syrup, 1 Tbs of lemon juice and some chopped fresh rosemary.  Tip into a tray and roast covered in foil for about 20 minutes, uncover and turn the veg over.  Will seal the pork steaks in a pan and then add to the tray to cook until the pork steaks are cooked through - about 15-20 minutes.

I've planning on using some par boiled butternut squash and carrots and add some courgettes, peppers & mushrooms.  Will also add some potatoes at one end but won't be tossing them in the marinade and don't really want sweet roast potatoes!

Have to admit it's the first time I've done this so no idea whether it will work!

Welcome @Crazycatlady2 - the more the merrier on this thread.

My curry was a great success this evening. I added some frozen cooked puy lentils so it was very filling. We might repeat it tomorrow. No breads or rice with it we followed up with some Greek-style yogurt with bottled raspberries
