The traybake worked quite well although couldn't really taste the maple syrup but it was nice to have the herbs stick to the veg! I cooked the potatoes and the pork separately.
Not much cooking involved today as have taken a pack of corned beef and chicken slices from the freezer (both of which came in one of last week's TGTG bags) which we'll have with fried up LO roasted veg from yesterday's dinner.
Tonight I will be reheating LO butter chicken and basmati/wild rice from Saturday night's dinner. I had planned for LOs to be frozen but DH wanted to have it for dinner last night but I'd already got out the pork steaks so decided we'd have them tonight rather than what I'd previously planned.
I'm still working my way through the avocados which came in the TGTG bags a couple of weeks ago. They are very slowly ripening so we had one each last night as a starter with some prawns from the the freezer. Now need to buy another bag to put in the freezer for when we have some more avocados ready to eat!

I actually managed to fully defrost the freezer yesterday with lots of help from DH - he actually had a lot of fun apparently. Wish I'd taken a before picture but it's now fully free of ice and there's space for things!
We're having a chicken tikka tray bake for dinner tonight and already have the chicken marinating in the fridge. Using up stuff today and trying to deplete the freezer tomorrow. Today's lunch was cheese and leftover hm coleslaw wraps and grapes. Dinner is teriyaki salmon with noodles and a ton of veg (mushrooms, peppers, sweetcorn, carrots, cauliflower leaves, broccoli).Lunch tomorrow will be parsnip soup and dinner will be cottage pie. I cooked a big pot of ragu yesterday which made three double portions. One has stayed out for use later in the week and two made it to the freezer. It stretched one lot of mince across three meals by bulking out with some finely chopped mushrooms and some red lentils. Also now I think about it made two tins of chopped toms stretch to three meals as well - wasn't expecting that!

A weekend of using things up and mostly sticking to the meal plan! Wahey!We were meant to have lamb Thursday but swapped to Friday so that was a treat. No take away, great start!Saturday was cooked breakfast using up freezer mushrooms, veggie sausages, eggs and leftover tinned beans. Then we saw friends at a social gathering and were given take away burgers for dinner so we put those with freezer chips.
Sunday was fridge left overs for everyone, LO had dauphinois potatoes, with beans and ham. DH had left over rice from Thursday with tuna Mayo and I had a jacket potato I’d previously defrosted but forgotten about with cheese and tuna Mayo. The fridge looked bare 😂
Prepped the leftover ham with carrots from last weeks TGTG bag, celery, frozen onions and sweet corn, and 3 loose sprouts for the filling of a pie yesterday and made up some pastry today to serve with mash and gravy for dinner.We were meant to have fishcakes using tinned mackerel but that can wait since there are still fresh items to use upFollow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

We had soup (still one portion of that batch left) for lunch, a second pot of soup is waiting. For supper we had the rest of the curry. It was popped in the simmer oven when we went out at 5pm - It needed to be quick as we were out until 7pm and I had a bee call at 7.30pm.
Today we need to use up the two chicken thighs I cooked on Sunday - maybe a stir-fry as I have the basic veg and dried egg noodles. We can live without bean sprouts or water chestnuts to keep it basic with plenty of fresh veg. Couscous salad for us tonight- I remembered to get the pomegranate seeds out of the freezer to defrost this morning, and other than that it will be the usual combination of mushrooms/chickpeas/red pepper I think, topped off with toasted seeds and halloumi. this really is pretty much a tuesday night staple for us as it works well on a night when MrEH is out and needs something he can just grab with relatively little prep when he gets home, and I'm not in until after 7pm as I go straight to the gym from work.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

We had the last of the frozen half peppers for lunch today, stuffed with rice, mince, onion and garlic and topped with some emmental I found in the freezer. Was very tasty.
Bought some sausages from the butchers today so going to make toad in the hole for dinner tonight so a couple of sausages each will be plenty along with some potatoes and veg. Rest of the sausages have been bagged up and frozen.
Also bought a whole lambs liver which I will cook tomorrow with some onions and mushrooms for dinner tomorrow night and the rest will be frozen - hopefully enough for another couple of meals for us both. Liver is such good value - £3.90 for just over 1.5lb.

I was making the sausage concoction to freeze in balls that goes around scotch eggs. Had a bit left over so added some chopped apple and rolled it all in bacon - looks a bit like fat sausages -That will be tea with some fresh veg.
I tend to struggle with ideas for puddings but tonight inspiration has surfaced. There is a surplus of bananas in the bowl that needs using up, and I know there's a bit of Nutella left at the bottom of the jar so I'll do baked bananas with a chocolate sauce. It will be a bit too sweet for me but Dh will enjoy it and I'll have an apple and a piece of cheese.
