Sometimes I do work out the price per portion @rtandon27 but not on a regular basis. I just bulk prepare lunches for myself for the week regardless if I'm in the office or not.
Making a japanese style chicken curry for dinner tonight to use a lone chicken breast from the freezer along with some carrots and potatoes that are lingering in the fridge.

Made a lamb dhansak yesterday for dinner tonight and a couple of portions into the freezer for another day. Got out a coq au vin from the freezer for dinner tomorrow.

8 jars of ratatouille being water bathed as we speak, used up several past their best aubergines, courgettes and peppers. Got a "roast in a tin" out of the freezer for OH, need to decide what I will have.2

Lunch today is going to be another batch of soybean stew using up a courgette, couple of potatoes and half an onion from the fridge. Our stores are overflowing with carrots, courgettes & tomatoes at the moment. Dinner tonight will be a tomato & courgette pasta that we made a couple of weeks ago & tasted of all those fresh summer flavours. OH has been roasting carrots and then drizzling with honey (or maple syrup) & a sprinkle of salt as they come out of the oven. Super tasty & something other than my standard request of lightly steamed veg. We are keeping our menu plans fairly simple at the moment as energies are focused on organizing and packing for a big move next month. The aim for the next little while is to eat fresh and in budget.4 YEARS 10 MONTHS DEBT FREE!!! Still haven't done the inventory of freezer or cupboards! Using up a cauliflower tonight for cauliflower mash with oven roasted tomato sauce.

More carrots consumed last night with new potato herby wedges and chicken burgers.
More new potatoes on the menu for dinner this evening along with pak choi and oven baked soy marinated salmon.
The mountain of courgettes is now down to one! (YEAH!) but we still have 2 punnets of cherry tomatoes and 1.5 dozen carrots to somehow add to this week's meal plan!4 YEARS 10 MONTHS DEBT FREE!!! The oven baked soy salmon sounds lovely.
My menu planning using up the freezer contents is going well. I'm really enjoying not having to think about what to have for tea. It also means I'm able to shop for fresh veg with the menu in mind.
Tonight we're having smoked haddock/salmon with new potatoes, carrots, broccoli and corn on the cob. Tomorrow we'll have bolagnese pasta bake as I've not got much bolgnese mix in the freezer. Friday will be sausages and mash with whatever veg we have left in the fridge.Grocery Challenge 2024

Must try the soy baked salmon. Much of the salmon we seem to have had lately is probably the farmed variety and some of it has had a rather 'muddy' taste. I guess nothing really beats the wild caught variety when you are lucky enough to be able to obtain it.2
