I shopped on Tuesday and picked up a generous piece of YS cod loin which we had baked with a few springs of ornamental bronze fennel, a dob of butter, salt and pepper in a foil parcel - I can recommend it. Not feeling it food wise at the moment (ironically, with courgettes literally every day, from the garden)

Got eight good sized courgettes in the kitchen. They take up so much space! We are seeing friends today for coffee and I may take them a couple... I have a piece of pork tenderloin out ready to slice into medallions. And a courgette and lime cake to foist on to visitors!

Last night I used up some leftover curry from the freezer, so that's made some space in there.  Tonight we're having biminbap (Korean rice bowls) so I can use up the half an onion, half a courgette, carrots and peppers that are in the fridge along with a steak and bulgogi marinade I found in the freezer.  Probably will also mean the end of our kimchi as well so will have to make up another batch this weekend.

Have a glut of tomatoes left over this week so will be having roasted tomatoes and cream cheese on toast for lunches over the next few days so they don't go to waste.

Had a look in the cupboards this morning and there's actually space in there!  Have plans to use a few things up in the meal plan for next week so should be a cheap food shop coming up.

    Tonight is burger night!

Home made rolls, beyond burger (stocked up when on special at Tesco), Vitalite cheese slice, this isn't bacon, Jack Monroe's burger sauce and home made chips - yum!  A bit of an indulgence but a real treat.

@ruby_eskimo - mmmm, I have bibimbap envy! - does it take long to make? - always comes across as a complicated recipe when I think about doing it at home

@CCW007 - nothing like a good fakeaway on a Friday night - we did chicken burgers on Tuesday, but tonight it's pizza!

hi all, really pleased with my menu plan this month, all based around the contents of the freezer. It's meant that lots of random odd bits are getting used up and I'm not shopping without a plan.
Going forward I'm planning on doubling up some meals, utilising my slow cooker more and batch preparing meals where I can to save time and wastage.

Hmm, I'going for a freezer dive in the "meat" freezer today. I might cook a whole leg of lamb (I'd prefer to cook the bottom end and cut the top part into lam leg steaks - we'll see) - assuming I am remembering correctly and it is in there. I need the extra space for garden produce that is over-spilling my catering upright job in the pig shed. And I have 6 cucumbers (gave one to DS), ...and we are out for dinner tonight!

I know what you mean about freezer space Suffolk_lass.

Trying to clear some space in my freezer so tonight we're having kebab (home made with minced beef from freezer for OH and vegan for me) with some frozen fries.  Tomorrow's lunch will be some YS tomato and basil soup out the freezer.

Picked up a magic bag at M0rrisons - including two bags of carrots I will probably make into soup. Lots of fruit I will use up this week, lots of avocadoes so I will need to freeze those.  A melon I won't use so taking that for my sister when I visit this weekend.  Also raided the reduced section and picked up several packs of organic chicken breasts very cheap so going to can those shortly.

25kg of potatoes purchased yesterday - 7 jars of chunky chips just canned.  Will can some as roasties and dehydrate some to use for scalloped potatoes / in stews.  If I can make enough space I may cook some as jacket spuds and freeze them.  I find it really helps to have pre-prepared potatoes in to save us from giving in to the lure of takeaway.

We are also digging into the freezer stores at the moment.

Lunch was simply coffee with berry scones made with blackberries that I picked last year & blueberries that we didn't even know were in there!

Another freezer dive yielded chicken drums that we roasted for dinner & had with roasted carrots, steamed potatoes & steamed pak choi.

Back from holiday and it's back to using the freezer!  When we got home yesterday I got out some beef cubes and chopped mixed veg which I frozen last winter to avoid wasting them.  I also found some chopped celeriac, again frozen to avoid waste so going to make a beef casserole and will have it with mashed celeriac (instead of the usual potatoes!).

Also got out burgers and rolls so that will be lunch - burger & onions in a roll.  Have my sister coming for lunch so wanted to do a bit more than a cheese sarnie!
