Had half a tin of beans in the fridge which needed using up so decided on a jacket potato, beans & some salad for lunch. DH is out playing golf so he'll probably just have a sandwich when he gets in and then have his main meal a couple of hours later.
I'm going to do something with mince from the freezer, so probably shepherds pie with some veg.2 -
We missed our salmon dinner on Wednesday as 1/3 of our grocery order was not delivered due to issues at the wearhouse! Instead we had fish finger tacos with a few salsas & pickled things as toppings along with shredded lettuce & chopped tomatoes. Thank goodness for freezer staples
Last night's dinner was bratwurst style sausages in buns with roasted potato wedges and the remaining salsas and salads from Weds.
Tonight will be a fancied up pizza, which is just a margarita pizza base from the freezer with our own toppings - pepperoni, olives, onions, tomatoes, mushrooms & extra cheese - also pineapple chunks which I know is controversial here, but I did grow up across the pond where it's actually very normal
The vegetable box arrived today, so will have to start working on next week's meal plan which will involve lots and lots of green leafy things & baby potatoes!4 YEARS 10 MONTHS DEBT FREE!!! Last night's dinner was claypot chicken & rice with lots of mushrooms. It's been a good long while since I cooked anything & it turned out very well in our heavy cast iron pot. I had forgotten just how hot our white pepper is, so have noted on the recipe to cut that particular ingredient in half!
Used up chicken & stock from the freezer, jasmine rice from the store cupboard, mushrooms from the veg box & all the marinade ingredients from the cupboard as well. Some more space made in the freezer!
Tonight OH is making pork & squash risotto - a new to us recipe, but he makes a really good risotto, so I'm looking forward to it! Hope he doesn't realize we are actually having rice two nights in a row & thinks of it more like Chinese last night & Italian tonight!4 YEARS 10 MONTHS DEBT FREE!!! I seem to have been cooking rice nearly every day for the last week or so! Fortunately DH doesn't have a problem with it.

Sorry, MIA for a few days as we tried to get up to date with bees, garden and Auntie's 90th birthday party. I meant no cooking from Thursday and last night we had a take away Chinese after I failed to get anything out of the freezer.
@rtandon27 Refried cold potatoes is just frying the pieces, cut into 1cm-ish chunks in a mixture of oil and butter until they have lovely crusty brown corners and are hot through - poor-mans chips is the other name we have for them. We call them lumpy potatoes in this house, Suffolk lass! 😄 We used to use up leftover roasties on a Monday this way too- very tasty 😋 Alao makes a good accompaniment to a full English breakfast 😋
We've been away for a few days, so no eating at home done until yesterday. Last night people had leftovers fo3m the freezer, which was good (all shattered) Tonight there are various activities going on so it will be a case of people eating at different times so I think I shall get people to eat random items up tonight as well. Tomorrow I may do a sort of honey and mustard chicken/ chicken supreme Cross which will use up various veg and some ys chicken from the freezer - I believe there is also some baguette in there which can get used

Hi all, I'm on a mission to use it up this month. Hasn't started that well adding 4 meatballs to the freezer but they'll be used up with another small pack of meatballs later in the month. Planning on making chicken tandorri skewers tomorrow, serving it with some salad, couscous etc.Grocery Challenge 2024
