OH, who usually is not at all brand conscious requested that we go back to our usual brand of chickpeas as the ones we had last night were small and hard by comparison to the usual - so i'ts back to the posh one's again until we find a suitable bargain brand!

Hi all, has anyone got any ideas for using up extremely salty streaky bacon? I'm going to do a freezer/store cupboard inventory later to hopefully use up some of the random bits that have been languishing for a while. I'm finishing my degree in September so hopefully will get a full time job shortly afterwards. Bit daunting after not working at all for 8 years. So i need to get prepared and fill the freezers with meals that are easy for hubby to prepare/cook.
Happy to have ideas of meals that work well in a slow cooker (thinking dump bags), oven baked like cottage pie & lasagne (any interesting alternative fillings) or ready prepared chicken dishes (hunters, leek & cheese topped, mozzerella, basil & tomato). Feeding 2 adults, 3 children (12,10,5) so needs to be family friendly, mildly spiced, no nuts.

I,d soak the rashers in cold water for a few hours which is a traditional method for removing excess salt in ham hocks etc , Pat dry with kitchen towel paper and then perhaps cut up and use in a tomato, onion & bacon pasta sauce, or in a home made mixed vegetable soup. Just remember not to add salt as one of your seasonings!1

@Mrs_Cheshire - we use pomegranate molasses as a drizzle to finish off vegetable & couscous dishes. I've heard it can also be used as a glaze on fish or lamb, though we have never tried this.
For a quick meal that my OH can prepare in his sleep, try this - it's a favorite here, satisfying his need for meat & my need for green things! We also steam carrots to serve alongside.4 YEARS 10 MONTHS DEBT FREE!!! I would snip up the salty rashers of bacon and add them and diced courgettes to a bolognese sauce to stir through penne.

Monday was Roast Chicken
Tuesday was Chicken Salad and Couscous
Wednesday was Hunter Chicken Hackleback potatoes sweetcorn and peas .. Chicken all gone now
Today sausage bacon mushrooms hashbrowns egg and baked beans. All out of the freezer/fridge/cupboards.
We got paid Tuesday and apart from buying milk bread yoghurts and cake for my ladies lunchbox I've not done a proper shop..... yet!!
Mortgage free September 2021. Narrowboat brought October 2021
