Just before I went shopping on Sunday, DH commented that the fridge was looking empty which made me chuckle. Goes to show that the meal planning is working!
Having a chicken stir fry tonight with a leftover breast from last week, some veg I picked up over the weekend and a nest of noodles from the cupboard. Still using up stuff from the freezer! Today it's shepherds pie with some mince from the freezer and LO mashed potatoes from last night. Will have it with some frozen veg.
Have got out some smoked haddock for breakfast tomorrow and will make kedgeree. Some sliced roast pork leftover from a Sunday lunch a while back will be used up for lunch tomorrow with some salad and new potatoes.
It feels good to be using up some much from the freezer. Just off to do an inventory of the freezer - I know most of what's in there but I'm sure there is more I can get into the menu plan over the next couple of months!
PS - it's going to be a veggie shepherds pie! The mince I thought was left in the freezer must have already been used so I found a veggie "bolognaise" mix in there so have added some soya mince and cooked onions to it and beefed it up with beef stock cubes, gravy browning and Worcester sauce.

This sounds very familiar! OH just asked what was for lunch today (as the meal-plan said fend for yourself) - I opened the fridge and listed of six bits of things that could be eaten & the response was something in the realm of what a fussy 3 year old would respond!😂😂😂

We make our own dinners on Tuedays and Thursdays and DH never tells me what he wants as he likes to "decide in the moment" - it usually ends up as beans on toast or a sandwich. A few weeks ago I suggested a grilled cheese sandwich (as we had lots of cheese in the fridge) and he loved it. Last week I suggested an omelette as we had lots of eggs to be used up and again it was a hit (we don't usually have omelettes as I can't stand them...) So now I just work out what we need to use and basically trick him into eating it 😆
Tonight I'm having a bit of a freezer surprise - I think it's a portion of chicken biriyani but can't be that sure as I never labelled the box! Going to use up some LO cubes of roast pork from the freezer for dinner tonight in a HM sweet and sour sauce. A lot of rice today as we had kedgeree for breakfast which also used up the last of some smoked haddock from the freezer.1

On Saturday we harvested loads of dwarf French beans. Thinking we might have a big bowl of them steamed with butter and a couple of poached eggs on top for supper. Option of some new potatoes in I can stir myself to dig some up.Save £12k in 2025 #2 I saved £14,660.97 of £6000 or 244.35% of my target. The 2026 Save £12k in 2026 thread is here
OS Grocery Challenge in 2025 I finished the year at £2880.99/£3000 or 96.03% of my annual spend so I am sticking with a £3000 annual budget for 2026

We are doing pasta dish for dinner as well - courgette, tomato, pancetta and cream along with whichever pasta there is a glut of! - Avoids using the oven and uses up another couple of items from the freezer/stores!4 YEARS 10 MONTHS DEBT FREE!!!
