...mmm @joedenise - what a good idea to make the meatloves mini - not something I'd have thought of - good for portion control, especially for the OH who sees meat and goes mad with his portions - LOL - very caveman of him 😉
Last night's dinner was simple & low effort - box fish & chips from the freezer with a tomato/cucumber salad on the side with Ranch dressing. All from the stores & another couple of items used from the freezer (yeah!).
The weekly groceries arrive this evening so fresh baked salmon with potatoes & side salad are planned. I'll need to rework the already planned weekly menu though, as several missing items or ridiculous substitutions! Very unusual for a mid week delivery, I wonder what happened? A bit of forced reverse planning will ensue - and surprisingly it's a fun little exercise.4 YEARS 10 MONTHS DEBT FREE!!! I love a chuck it in & leave it type of meal!
Our salmon meal last night was exactly that, tossed in a light marinade and then chucked in the oven until done, but OH did get fancy and pan-fried the asparagus in butter instead of oven roasting. That may just been the last of the British asparagus though, as tasty as it was, they were fat with about 1/3 being the woody end that got discarded before cooking.
Tonight another from the stores 'cheat's' meal - chicken breast in tempura batter from the freezer topped with katsu curry sauce from the cupboard, served with with a couple of packs of microwave rice & steamed pak choi. A quick and simple meal was planned as I was meant to be working in the city today, but am still recovering from 2nd vax side effects and at home - either way quick and simple is in order!4 YEARS 10 MONTHS DEBT FREE!!! Made jerk goat stew yesterday so will reheat that for dinner tonight and just do some rice 'n' peas (kidney beans) to go with it so nice and easy.
Have made Doner Kebab Meat this morning which DH has thinly sliced and it's now in the freezer. Will have that in a pitta bread with HM chilli sauce and HM garlic sauce and plenty of salad, probably for lunch at the weekend.

Have got a goat curry out of the freezer to have for dinner tomorrow night.
Cooked boiled ham for dinner tonight and will slice some to have cold and the rest will be frozen for another day.

We've still got two leeks from the glut of a few weeks ago! I'm not feeling the love & having a hard time working them into the meal plan - 🤣
Today's lunch will be assorted bits we've not finished of the weekend - chicken thighs, greek pork skewers, pita bread, roast summer veg & coleslaw. We're having bolognese for dinner tonight using up things from the cupboard, freezer and fridge. Starting to really make a dent in the stores so pleased about that and have plans to start making real progress on the freezer again next week.
