@joedenise - can I ask where you source the goat from? I love it in Caribbean style stew, but have not had any since I moved to the UK years ago! One of my fondest memories growing up across the pond was going to the fish & chip shop but ordering Caribbean goat stew & dhal roti instead of fish! I've found out since that that shop does not even do fish & chips anymore but only the Caribbean food!4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! (23 AUG 2021)New projection - 14 YEARS 10 MONTHS LEFT OF 20 YEARS (reduced by 15 mths)Psst...I may have started a diary!1

Have to say it seems to go a long way. I used Kg of goat on the bone and made 6 portions of goat curry from it but have to admit to adding quite a bit of veg to it to stretch it!
I like Caribbean style stew too and have made it using ox cheek which I'd picked up in Mr Ts Yellow Stickered and very nice it was too! I use a Pinch of Nom recipe for that. I suspect it would work with goat too - maybe I'll try that with some of the goat when it's defrosted!

We had a version of Shakshuka last night - I left out a few ingredients (because I did not have the recipe with me) and added in some chipolatas twisted into three mini sausages and some left over new potatoes. I also used smoked instead of fresh paprika. It was a keeper recipe based on this oneSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

I always use smoked paprika in my Shakshuka @Suffolk_lass I just prefer the smoky flavour really.
Having leftover kimchi jjigae for dinner tonight with the last of my cucumber kimchi on the side. Thank-you @joedenise - what a revelation that website was - cuts of meat I'd not seen since living in a city across the pond - may just have to give that one a go next time we do a meat restock!
@Suffolk_lass & @ruby_eskimo - another smoked paprika fan here - yesterday I used it to dress some hummus along with olive oil and dried chives - I love the rounded flavour it imparts.
Another 'use up the leeks' success here - we adapted a gnocchi recipe to use leeks instead of broccoli - not a recipe we usually eat in the summer as it's quite heavy and filling, but given the rotten rainy weather yesterday, it really hit the spot. Also used up the rest of the chestnut mushrooms, the last of the lardons, creme fraiche & parmesan. I do rather like eating down the stores & only two more leeks to go!4 YEARS 10 MONTHS DEBT FREE!!! Using up the minced pork I got out of the freezer the other day to make mini meatloaves, hopefully there will be enough for tonight's dinner and then cold with salad for lunch tomorrow.
Off to see whether the goat has defrosted and if it has make some more curry, although I shall freeze it as this week will otherwise be a bit curry heavy! DH had a look at this weeks menu plan and said "do you realise we've got rice 6 days this week?". Oops - better change the plan then if he's commenting about it - not something he usually does thankfully!

We are the opposite - I did some steamed rice last Saturday to top up the stir-fry and DH commented twice (rolls eyes) how much he liked it. We generally follow a low-ish carb diet so it is something I am quite sparing with. I have heard him now though!

I managed to make 8 mini pork meatloaves from the mix I made so we had 2 each last night and today we'll have the other 2 with some chips & beans.
Going to make braised lamb shanks in red wine & rosemary with veg - the lamb shanks were in the freezer.1
