Going to be lots of egg recipes here - my egg delivery is a whole tray of small eggs instead of a dozen large ones. It looks as though I will be shopping for lemons (to make elderflower fizz) and the few essentials I need for a stir-fry tomorrow, when our motorhome buddy comesSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

The beef bourguignon is in the fridge and nearly defrosted so will be another easy dinner tonight - just need to reheat it and do some mash & green veg (from the freezer) to go with it.
Going to get some home smoked bacon out of the outside freezer as soon as there is a break in the weather for breakfasts over the weekend. Have also got out some sloppy joes from the inside freezer for tomorrow night's dinner. Will have in a roll with some chips and beans.3 -

Ended up doing a pasta bake with the sloppy joes in the end which made loads so have some left over which we'll have for lunch today with some salad. There were also some chips left over so we're having those reheated in the Remoska with our fry up for breakfast.
Going to do a chicken tray bake with some chicken breasts from the freezer. Will add in some of the chickpeas I'm planning on cooking this morning to make butternut squash (from freezer) and chickpea curry for dinner tomorrow night.
It's great using up so much freezer food and also means some easy meals for me!

Some lovely meal ideas over here! Tonight we're having stuffed peppers. The peppers were left over from last week's shop, then I'm just cooking up some rice with added leftover random veg and topping with a bit of grated cheese. Will make a bit of a salad to have on the side; it's one of DH's most requested meals for some reason and good for getting him to eat vegetables 😆Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173

Made a butternut squash and chickpea curry yesterday which we'll have for dinner tonight. The butternut squash was from the freezer and I used dried chickpeas which I'd soaked overnight and then cooked yesterday morning.
Have got some goat out of the freezer and will be making yet more curry tomorrow once it has defrosted to eat the following day.
It's going to be a very "spicy" week this week with so much curry! Apparently it's supposed to help lose weight but we will see!
