That sounds right up my street @rtandon27 although DH isn't keen on salmon so not something we have very often.

I took some chicken thighs out of the freezer for dinner tonight and cooking them slowly in the oven with onions, bacon, peppers, mushrooms & tinned tomatoes.  Going to cook some pasta to have with it.  It's based on a Spanish recipe of chicken & peppers.

I've got out a small portion of butter chicken for lunch tomorrow which I'll have with a jacket potato as DH will be out at lunchtime.  For the evening I'm going to do beef in black bean sauce - steak from freezer, black bean sauce from stores.  Will probably have with noodles.

Agree that salmon marinade sounds great @rtandon27 We're having salmon tonight but as a tray bake with chorizo, potatoes, peppers and green beans.  Everything but the potatoes is from the freezer and it's definitely looking a bit clearer in there.  Have a plan to use a couple more things up from there next week so we can have a go at defrosting it again 🙄

We've got lamb (again!) - still working our way through the humungous leg that took up such a huge amount of freezer space! Just some ready cooked, chopped lumps to curry today. I will have a freezer dive for the veg too

Wasn't hungry last night and neither was DH (he'd had a roast and pudding at the golf club after a match) so DH finished off the butter chicken with a jacket and I just had a couple of crisp breads with some squirty cheese (Primula!).  So beef in black bean sauce for dinner tonight instead.

Freezer dive for tonights dinner and we're having a butternut squash, swede and chickpea tagine with herby couscous.

  • Afternoon all.

I use this bulgogi marinade that I whizz up in a blender and then just chop up a steak or a chicken breast and marinate in it.
Thankyou Ruby_eskimo for the recipe, love bulgogi and havent made it for a while.

Beans on cheese on toast last night! Sublime! It was 8 before we got to eat so something simple and quick was needed

Jacket potatoes! what a treat. Very occasional for us but when we do, I add butter and coleslaw to the beans and cheese, and lots of black pepper, and a dash of tabasco and Worcester in with the beans (whistles nonchalantly)

I often add a bit of Worcester sauce to beans, definitely gives them a nicer flavour.

Using up the LO gammon from the weekend so we'll have that cold with some HM chips and beans - will definitely be adding a bit of Worcester and probably so chopped up tomato as well.  Love an easy evening meal!
