Tonight's dinner was a stir-fry based on the bits of veg that needed using up! Sprouting Broc, the outer leaves of a large pak choi, 4 mushrooms and a small red onion - along with some pre-cooked rice and chicken left from last night's roast. One of the best ways to tidy up the fridge!4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! OK going to change the name by removing "in April" so it is not time-bound.
Then it can run all the time there is interest or ideas and it doesn't always need to be me in control. I love the way the conversation changes over time.
Over here, we had the left over pastry made into a pastry case and filled with a mixture of smoked salmon (a £2 pack), frozen spinach, egg and cream - so a sort of quiche or flan. Had it with some cabbage and never-ending carrots (never-ending because husband bought twice as many as normal - so we are eating them every day). That was Saturday with a huge portion left (will do lunch as a side to soup). Last night I cooked four lamb cutlets - bought half a lamb from a friend who reared 16 lambs last year - so not enough to call him a farmer - they were so lovely but more fatty than you would buy - and had the longer bones I remember from my childhood - again with carrots and cabbage.
I also made soup - onions, carrots, a sweet potato, some frozen leeks and a bag of homegrown veg - turned out to be courgettes and peppers with a veg stock jelly, seasoned with S&P, some mixed herbs and half a teaspoon of lazy chilli - the soup will go all week.Save £12k in 2025 #2 I am at £9586.01 out of £6000 after August (158.45%)

We put sliced plantain in the airfryer, and that cooks them nicely without added oil.It's DD2's 9th birthday on Wednesday, and she has requested a chocolate cake with lots of candy. That, I can make from pantry items and hidden candy stash. Or, just maybe, I will go to the more upmarket supermarket, buy a proper chocolate cake and plain m&m's, and add candy at home. I will then also buy all the items I cannot get at our A1di. It's very unfortunate that Mr Kipling is unknown in this country..... The local bakery sells bakery-made cakes at GBP12 for 6 slices; the supermarket sells bakery-factory-made cakes at similar prices. Thanks for continuing the thread Suffolk_lass (we lived in Suffolk for 18 very happy years).How long would folks keep smoked salmon in freezer? I’m going to defrost freezer at weekend and wondering whether to risk the Christmas smoked salmon pack. Today it’s eggs and veg with baked potatoes. Bit of a mix. Collecting veg box tomorrow....and sausages yum yum7

That is a brilliant idea for plantain - we did ours in the oven with some coconut oil & sprinkled with hot paprika & salt - not quite a calorie conscious snack but they were rather tasty!4 YEARS 10 MONTHS DEBT FREE!!!
