PS: If you have too many carrots, don’t forget carrot cake and Carrot & Hazelnut Roast. Both freeze well if you want to double up. The latter comes from Rose Elliott’s Cheap and Easy Cookbook. Who had too much celeriac? Rose’s website has a Celeric Terrine recipe
This is my version. I usually serve it with roast potatoes and gravy. Serves 4:Carrot & Hazelnut Roast
Ingredients
2 large carrots, sliced
1 onion, peeled and roughly chopped
2-3 slices bread, torn into strips
100g-200g hazelnuts
2 teaspooons mixed herbs
2 eggs
1 tablespoon soy sauce
Method- Preheat the oven to 180C.
- Place the hazelnuts, carrots, onion and bread into the food processor, hold it securely and process until chopped. (It’ll bounce around a bit.)
- Add the remaining ingredients and process until combined.
- Spoon into a lined loaf pan and bake for 50-60 minutes, or until the middle feels firm to touch and it is browned on top.
- Turn out of the pan, peel off the lining and cut into 4 to serve.

ETA:. This recipe doubles up well and you can freeze the second one uncooked. Remove from loaf pan once frozen. Pop back into the loaf pan and defrost in the fridge overnight.

I got some samphire in my supermarket delivery yesterday, but a bit annoyingly, the use-by is today, and I know it doesn’t keep well, so I chopped some up and added it to the carrot soup I made a few days ago, and had that for brunch.
The rest of the samphire will be eaten with the last of the carrot soup this evening!
Then, the last of the carrots* will be made into a nut roast using Pip’s recipe!
*Until Thursday, when more will be arriving! 😂

Or shall I set up a new one for May (personally I am loath to lose the lovely recipes) - I'm conscious there are loads at the start of the Grocery Challenge and not sure if they are used much now - so many

What do you think? - personally I have tried three new things and really enjoyed reading along, but that is just me...Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far

As there are only 147 posts, I think we can keep going for a bit - it's only when there are thousands of posts that it gets unmanageable. How about renaming it Q2 2020? That covers three months and then we can have another think.8

Thanks for the plantain ideas - I'm currently baking slices in coconut oil to see what happens. Partly because the idea of something to replace crisps is quite appealing7
