Hi everyone!
I came here looking for some ideas on how to use veggies: OH and I get one of those veggie boxes every week and sometimes are a bit pressed for ideas on how to use things - last week we had to call both our sets of parents just to figure out what one of the veggies was, let alone how to use it!
Yesterday we used the last dregs of last week's box for a nasi goreng (swapping shallots for spring onions and adding some rogue peppers) and a potatoes + leeks + carrots soup. This means we have just one white cabbage left to use - any of you has any idea how to use it? I'm a bit bored of steamed cabbage but don't really know what else to doGC £~~/3004 -

We often add a bit of finely chopped or shredded cabbage to salads, and a simple coleslaw recipe (that the restaurant I used to help run used) is:
Coleslaw
shredded white cabbage (about a quarter), 1-2 shredded carrots, 1 onion sliced into long strips like the veg shreds, 1 finely chopped chilli, the grated zest of a lemon mixed together then dressed with a sauce of 2-3 tablespoons of ready-made mayonnaise, the juice of the lemon and plenty of black pepper. I have used greek-style yogurt instead of mayonnaise for this too.
The chilli is optional but goes really well in coleslaw and is a little but muted by the creaminess of the sauceSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Also have a look on the vegan store cupboard challenge, loads of vegetable recipes, which anyone can use/adapt, no need to be a vegan (or vegetarian, as I am).GC £~~/3006
