It's actually called Poor Man's Potatoes and i've found someone's blog who has the actual recipe HERE. Enjoygreent said:That hash sounds lovely @ruby_eskimo - I shall have a g00gle and see if I an find the recipe and maybe have a play next week
Mid morning and I've no idea what to cook for dinner tonight - if all else fails I will do fajitas (always a good staple in this house) as I know there are peppers that have been hanging around a while to use up.

enjoying reading everyone's menus, inspires me to waste no food. Tomorrow is jacket potatoe each and home made coleslaw from the white cabbage left in fridge, carrot, red onion and mayo. Potatoe fillings are left over quorn bolognaise sauce and other one is left over tuna mayonnaise, with some left over beetroot. great to get a "free" meal.3

Lunch today was fake-away Shawarma wraps. Sliced up some pre-cooked roasted chicken thighs, lettuce, tomato & shallots. Used up the last of the garlicky vegan mayo, some more of a never ending batch of home-made root veg coleslaw & two flame-baked naans from the store-cupboard. So tasty - amazing how a little bit of fresh salad can pick up a meal!4 YEARS 10 MONTHS DEBT FREE!!! Hi all, we're having steak & sweet potato fries out of the freezer for tea tonight, will serve with pesto stuffed mushrooms and some sliced peppers. Kids are having chicken kiev's, the last of the alphabites and some veg. Need to go and have a sort through some freezer draws as I need to fit in a portion of cottage pie I cooked the other day and some diced beef & lamb chops I picked up yesterday. I'm debating using up the swede/carrots/parsnips in the fridge and making a stew with the beef, think I'll pop it in the slow cooker.Grocery Challenge 2024
