Yes it's just grated potato, well drained and patted dry then onto non-stick baking paper and squidge into a pizza shape. It's based on a recipe from the SlimmingEats website.

Lunches today used up some sliced turkey (free from 0li0 last month) and a few ys chipolatas from Dec along with some ys smoked streaky bacon purchased today (but still in date until Sunday) - Christmas Dinner baguettes with some stuffing and mayonnaise
Dinner is again a mish-mash - DH and I are having leftovers from last night, adult children are having chicken shawarma (which neither myself or DH are fussed on) which has used up the last of the tin of spice rub to make them and will use some of the many flatbreads (0lio) we have in the freezer; the youngest 2 are having something from the freezer or simple pasta. We will still eat together, just different things

Today's lunch was simple ham, cheese & salad sandwiches with a soup made from the vegetable 'trivit' & drippings from our last Sunday pork roast, put in a handful of alphabet pasta that we picked up on clearance sale. There is something so satisfying about homemade soup that is just not there when eating soup from a can!

@rtandon27 - make sure you do it on non-stick as the base definitely sticks to greaseproof paper! I think it's probably better just on a non-stick baking sheet or one of those silicon sheets which is what I'll do next time. I bought a greaseproof/baking paper roll which said it was non-stick but it still stuck to it so will end up just using as normal greaseproof in future!

Cooking some chicken thighs from the freezer and will then make a chicken and ham loaf for dinner tonight with mash and veg. LOs will be for lunch tomorrow, probably with some salad.

Morning all! Have a lot of things to use up today so lunch is going to be a hash with some lonely potatoes from the cupboard, half a red onion and some frozen peppers, topped with an egg or two. Have a few more eggs to use so will probably hard boil those and DH can have egg mayo sandwiches for the next couple of days. Dinner tonight is lasagne so have chucked everything in the slow cooker so I have less to do later. - we had cauliflower cheese with the inner leaves added (love those) as I was chairing a difficult local meeting last night. We have the peppers stuffed with the remains of the lamb tonight and loads of courgette soup is made. I plan to bake treats to go in to the local hospital today (apparently far fewer people are doing this, this time around and the nurses really appreciate a little piece of something, so brownies and shortbread I think, with maybe something oaty like twinks hobnobsSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

It really was @Suffolk_lass! I follow a Nigel Slater recipe where you fry off the potatoes and veg for a couple of minutes and then add some vegetable stock, stick the lid on it and leave it for 15-20 minutes. some of the potatoes end up almost melting and it's a warm and comforting bowl of food, perfect for this weather.
Lasagne went down well last night and we now have 2 portions in the freezer along with 2 portions of bolognese for use at a later date. Tonight I'm having a frozen cod fillet baked in the oven, with some minty mushy peas and green beans (also from the freezer) and lunch is a falafel bowl which will use up a lot of what's in the fridge. That hash sounds lovely @ruby_eskimo - I shall have a g00gle and see if I an find the recipe and maybe have a play next week
