We had pulled pork last night - leftovwrs from sometime last week and shoved in freezer then
.Made some.super fluffy (and huge!) floury baps to have the pork in
Haven't got the foggiest what anyone is eating today. There is a very small amount of pork left which no doubt someone will have for lunch. Other than that (and you croissants for breakfast) I have no idea - will canvass opinions later. I would like it to be a 'use various odd things up from the freezer' kind of day - so suspect we will all eat different things this evening but at the same time

Baked our tuna with olive oil, seasonings and tarragon in foil parcels. Very tasty with mixed buttered steamed veg. I got one of the turkey pies out for tonight. Although pastry is not on my diet the foil cover is damaged and it needed to be defrosted. A full 5cm of space in that drawer!Save £12k in 2025 #2 I am at £10,020.92 out of £6000 after September
OS Grocery Challenge in 2025 I am at £2234.63/£3000 or 74.49% of my annual spend so far (not going to be much of a Christmas at this rate as no spare after 9 months!
I also Reverse Meal Plan on that thread and grow much of our own premium price fruit and veg, joining in on the Grow your own thread

Today's lunch reverse engineered from all kinds of bits in the fridge & stores - Vietnamese Bahn Mi sandwiches, with all the last bits of salady vegetabels, fridge-pickled red onion slices & more of Sunday's pork roast sliced finely - made on brioche baguettes that were in the cupboard from the last shop. I find they stay fresh between shops & don't involve turning the oven on as would a part-baked baguette. Also used up the last of the instant Miso soups left from the days when going into the office was a thing - LOL - It was a remarkably refreshing lunch, after all the weeks of hearty soups & cheesy toasties. Almost tastes of spring and goes along with the brilliant sunshine that came out after a morning of pouring rain 😊4 YEARS 10 MONTHS DEBT FREE!!! Hi all, doing well with using up bits out of the freezer.
Having pies tonight with mash & veg.
I've got some cooked prawns in the freezer which have a lemon & garlic dressing, think I may have some tomorrow for lunch with some salad (got some lettuce to use up). Not sure whether they will be best served cold or hot?: Will get a pack of chicken and some paninis out for hubby & kids. Will eat the leftover chicken & veg from yesterday's fajita's in a sauce with rice tomorrow.
I tried some pickled red onion that came in a pack of lamb kebabs yesterday was really nice, so need to find a recipe to try and replicate it.Grocery Challenge 2024

@Mrs_Cheshire - This is our favourite recipe for pickled red onions - super easy to make! - I find that 1/4 recipe does 2 of us for an entire week as a side for lunch toasties.4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! I cooked some vegetable cocktail sausages last night which were purple
due to the amount of beetroot the manufacturer had used. Cannot say I would buy them again, but used the leftovers today with some leftover bolognaise sauce from the freezer, a few onions and odd mushrooms, roasted odd tomatoes and garlic from the fridge served with spagetti. I have to admit I would have been delighted to be served that in a restaurant ..... or as my partner says "I would gladly have paid for that" ha ha, which is our way of saying it was delicious.

We had turkey pie last night (padded out with frozen peas and sweetcorn) that I made and froze after Christmas. Half left (maybe, if DH didn't snack too much). I plan to use some aubergine and cauliflower tonight - might make my no-pasta bake with fridge veg roasted with a cheese sauce - I will offer him pie for lunch but I will have soup, to keep the starchy carbs to a minimumSave £12k in 2025 #2 I am at £10,020.92 out of £6000 after September

Last night's dinner was Skinny Lasagne made from a H@iry Bik3rs recipe we found on the Beeb. Super tasty & low carb, bth I really missed the pasta! Everything was from the freezer, veg box and store cupboard. OH loved it, but then again he did spend ALL evening making it. He's fallen in love with their style of recipe writing through, as it was super thorough & provided at least 2 dozen instructions, including how to cut the various bit of veg. Made 6 portions - I had 1.5, OH said he was plenty full with just the one, but then again he eats a lot more throughout the day than I do. There are 3.5 potions left to dish up and freeze for another time - I may somehow stretch that into 4, with two full-size and two a bit smaller, perhaps for lunches.
Today's nostalgic, but not so healthy lunch will be a box of Kr@ft Dinner (day-glo orange cheesy pasta) & fried hot dogs. There will be no vegetable in sight, unless ketchup counts! I'm digging into a care package sent from across the pond to chase away the home-sick blues - lol - Comfort food eating at it's best worst best worst - I can't decide how to describe it, so comfort food on it's own will have to do!4 YEARS 10 MONTHS DEBT FREE!!!
