Batch cooked a load of spiced mixed veg with green lentils to make biryani last night for DH and I which was really nice. Two lots gone into the freezer so another 2 biryanis will be made in future.
Making seared scallops with potatoes which will use up some spring onions & red pepper which fridge which need using.

Last night's dinner was a use it up stir-fry, using chicken from the freezer, red peppers, pak choi, carrots, red onion, ginger, garlic & shelf-stable udon noodles. We've been watching a cooking/travel show featuring Thailand the past couple of evenings, so OH tried his hand at a northern Thai flavoured stir-fry, even toasting & grinding dry rice as a seasoning. We suddenly realized 1/2 way through eating it that there was not a single chili of any sort in it, so was missing that distinctive heat! It was however, delicious & we finished every last bit.4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! (23 AUG 2021)New projection - 14 YEARS 10 MONTHS LEFT OF 20 YEARS (reduced by 15 mths)Psst...I may have started a diary!6

JOEDENISE you've just inspired me to use up the green lentils, that have been hanging around for ages 😉I usually use red ones as they don't need soaking .
Am experimenting with an air fried , spicy cauli steak tonight.The cauli I got in my delivery was absolutely mahoosive , so will get a few meals out of it 😁

Glad to have inspired you @candygirl. I assume you will be using dried green lentils? I've got loads of dried but didn't actually decide to use green lentils until I was actually cooking the spiced veg mix otherwise I'd of used dried but had a tin in the cupboard. Will definitely be replacing it as it's handy to have in the cupboard to use without having to remember to soak dried ones!5

We've had a no-pasta veg bake the last two nights. Used up a good amount of cabbage which is really nice in it in a really unexpected way. It sort of assumes the texture of penne, mixed with roasted veg and a cheese sauce before sprinkling with parmesan and grilling until brown and bubbly - here's a picture (can't see how to make it smaller!)
Having a simple chipolata salad tonight with DH having a jacket potato with his. Early too as we kind of missed lunch and it's too late now - so if necessary he can will snack some bread and cheese later tonight.

That looks nice and really good way of eating more vegetable fibre. How do you cook the cabbage? Just slice thinly and simmer until al dente? Then mix with the roasted veg and cheese sauce before grilling?4

We are having a fridge casserole today. There was a bag containing half an aubergine, half a large sweet potato and half a butternut squash. I emptied the veg drawer and found three sad red onions and a knob of ginger too (then washed it and replaced the kitchen paper. Carrots, cabbage and cauliflower brought in from the shed fridge to replenish but everything else, including a couple of carrots and about two thirds of a red pepper are in with slices of sausage meat - a bit like meatballs/burgers plus some passata and baked beans. It doesn't have a name but it smells great and it meant no trip out to the garage in the snow!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
