Had the remains of the veg box slowly deteriorating in the vegetable drawer of the fridge - including half an enormous swede and some rapidly deliquescing spinach, so made vegetable curry with the addition of a tin of chickpeas. As usual, it made industrial quantities ( 8 meals in total) but it freezes well. Usually put a chicken thigh in, but couldn't be bothered faffing to defrost an entire pack of them just for this, so used a chicken stock cube instead - it tasted the same, and was a lot less effort.2024 Fashion on the Ration - 10/66 coupons used

OH made us toad-in-hole for dinner - pan cooked savoy cabbage and onions on the side. Used the last sausages from the freezer. Using up the 'last of' always feels so virtuous - lol4 YEARS 10 MONTHS DEBT FREE!!! Wow, some really yummy sounding meals on the thread! I had a boring jacket potato last night as we had potatoes to use up and couldn't think of anything else to have. Had tuna, cheese and salad with it though to make a proper meal. It's lots of use up stuff today for us too! Breakfast hash made using up the last tin of potatoes, the last mushrooms, a few cherry tomatoes and half an onion all chopped and fried up together and topped off with a couple of fried eggs. Lunch will be cheese on toast using some grated cheese from the freezer and dinner will be a veggie curry from the freezer with some basmati/wild rice.

Tonight we are eating different things, as not everyone likes the things jnvolved! There is a chicken and mushroom saag, using up old mushrooms and some of the frozen chopped spinach mountain ⛰- and a big handful of peas in to sweeten it up slightly. I think I may have overdone the spices (whoops!) So may serve with a dollop of rather old Greek yogurt too
Another item on the menu is a sort of jambalaya type thing using up the last 6 prawns that have been hanging around, 2 wrinkly peppers, leftover chopped red onion from salad at the weekend and some chicken and very old chorizo (bought ys) from the freezer, along with some leftover rice that had been frozen. For DD (who can't eat prawns and won't eat the saag as it has too much spinach in and nutmeg (which she dislikes) there is a ready meal ping curry, bought ys from sainz for pence a few weeks back.

I've got a bag of lamb mince out of the freezer and will make stuffed peppers and a small shepherds pie with sweet potato mixed in with the potato. I also sent DH out to brush the snow away from the bee hive entrance and he brought a bag of courgettes in from the outhouse so I will make soup once the cricket has finished.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Sounds like a lovely feast of food greent.
I'm using up some mushrooms and 1/3 courgette in a risotto tonight. Using up the last couple of last weeks mushrooms from the fridge plus a small pack of bacon lardons (home smoked bacon) and pizza sauce from freezer and a sprouty potato to make a hash brown pizza for lunch.
Dinner tonight will use up the LO roast beef from the weekend.
