Today:
B - Muller Light (0.5), granola, banana, apple
D - Tray bake: quinoa, bulgur wheat, sweet potato, mushrooms, cherry tomatoes
T - Butternut squash and mushroom baked gnocchi
HEA - Milk in coffees
HEB - Granola
Syns - Sugar in coffees (4), yogurt (0.5), hot chocolate (2) = 6.5
I'm trying to work out why I have three aubergines in the fridge - I obviously had something in mind when I bought them but I didn't write it down and can't for the life of me remember!Weightloss: 14.5/65lb1 -
You're doing really well with the Vegetarian Lent tete. It seems to have given you an extra focus to do your menus. I love aubergines so I'm sure you'll find interesting way to use them up. Roast vegetables stirred into pasta make a nice meal, hot or cold.
Back on plan today. I'm trying to be as good as I can for the next week to offset my short holiday next week. Hotel breakfasts will be fine but beyond that I'm not sure.
Today's EE plan-
B- NAs grapefruit, skinny syrup, half banana (F), HEB porage with HEA milk
L-ham (P), fried veg and pickles (S)
D- sausages, mash (F), onions, cauli, broccoli, cabbage, kale (S)

I've planned my menus so well (so far) that I've not even noticed I'm not having meat. I'm sure if I have a flick through my roasting tin book the reason for the mystery aubergines will come to me
Roast veg and pasta will be a nice easy packed lunch option though, I'll do that next week.

Reporting in with a STS this week after WI, sooooo frustrating. But the good news is I got Greatest Loser in groupso am trying to feel proud of that. I think I will eat more carbs this week to try and shake things up, have not been having many for a long time but want to lose another 1.5lbs to get to Target. Eating chocolate at the mo to celebrate, but recording all syns to even things out over the week. I will get there!!! Good luck everyone else this week xx

. Tried it at tasters once and have made it several times since, we really like it. And a few SW mags ago there was a recipe you needed 3 aubergines for but can’t find it now. Was some kind of veggie ovenbake thing. Will post if I come across it again.
