  • I have an unopened pot of elmlea double cream in the fridge with a best before of 18th nov. Do you think it would be safe to use? I know they normally have a pretty good date on so probably will be alright but thought i would check.
  • Making homemade truffles as the ones my MIL likes don't seem to be available online - cooked for too long in the microwave so 200g of chocolate just seized!

    Not to be thwarted, I poured half a carton of oat cream and mixed it up, thinking of making chocolate sauce but looking at it today, I wondered if it could be saved, so bowl over the base of the double-boiler, 50g butter (ish), tsp golden syrup, dribble of oat cream and a tablespoon of whisky and a handful of chocolate chips - it's presently cooling down so I'm hoping it sets to a usable texture. If nothing else, it tastes gorgeous!

  • I'm a bit of a lurker on this thread but I always read and wanted to say thank you for another year of inspiration! I'm trying really hard with food waste, i'm not always great but constantly strive to be better.

    In the last week i've made turkey, ham and vegetable soup and turkey and ham pie to use up some Christmas meat, with some sliced turkey going in the freezer for a roast dinner another day and some ham potentially for soup etc. I've also used up some single cream in mashed potato, I doubled the portion and froze half. I had baked camembert on Christmas Eve, there's still some left in the fridge but i'm not sure if it's ok to eat again after baking or even if i've left it too long now! Will have to do some research.

    I hope 2021 proves to be a better year for everyone and keep up the good work with no food waste!

  • Question. I roasted a chicken yesterday and would like to make a chicken chowder from the carcass. Its a jamie oliver recipe that says it serves 6. If I make it and then keep some in the fridge is it ok to be reheated? I was always lead to believe that once meat has been cooked, it can be reheated once only. Thoughts??

    I'd take a chance but that's a personal opinion.  I think only you can make the decision.  

    If you make a stock with the carcass you'd certainly be reheating it again wouldn't you so I can't really see any difference.

    Hello - not sure about the Camembert question. I’ll bet it was delicious though. 
    My DH buys sourdough from a little bakers and it always comes in a paper bag. 
    Re heating chicken. I do it for chicken stew type things and have never thought otherwise. Bring it well through the boil.

    Hi, I had 4 v large Purple Carrots in my veg box yesterday, do I cook them as ordinary orange carrots and will the purple 'leek out'?.  If anyone has other ideas to cook them I would be grateful. I have tried Woogling but no luck.  Many thanks xx

    They should cook the same way as orange carrots.  I think if you boil them you may lose some or most of the colour as you do with most purple veg however you may keep it if you don't boil them for example roasting them

    Purple carrots do "bleed" if you steam them over other veg or with other veg everything else is purple. They do stay purple. They often get sold with orange and yellow carrots but if you cook them together they end up discolouring the others. I'm not a fan. My suggestion would be a salad with red cabbage and red onions and maybe  beetroot. 
    Or just cook them as you would ordinary carrots
    Or roast them with some red onions.
    They dont taste any different.
